This homemade Italian dressing is quick to make and far fresher than store-bought versions. It uses simple pantry ingredients and works just as well for salads as it does for marinating chicken or dressing pasta.

Italian Dressing

Homemade Italian Dressing That Works for Salads, Marinades, and Pasta

Italian dressing has always been a staple in my kitchen because it hits that bright, zesty flavor I want without feeling heavy. It's the kind of dressing that works with crisp greens, grilled vegetables, and simple bowls that need a quick boost.

What I appreciate most about this recipe is how dependable it is. Everything comes together in one jar in minutes, tastes even better after a short rest in the fridge, and I use it as a classic salad dressing, a quick chicken marinade, or a light toss-in for pasta salads, depending on what I'm serving.

Italian Dressing

Why You'll Love It

  • Quick to Make: Ready in minutes with one jar and no equipment.
  • Pantry-Based: Uses everyday ingredients you likely already have.
  • Versatile: Works as a salad dressing, marinade, or pasta dressing.

Key Ingredients in Italian Dressing

You'll find the exact measurements in the recipe card, but here's a closer look at key ingredients and why I use them.

  • Olive Oil & Acidity: I use extra virgin olive oil with white wine vinegar and lemon juice to create a bright, balanced base that stays light and smooth.
  • Emulsifiers & Sweetness: Dijon mustard helps everything bind together, while honey gently balances the acidity without overpowering the dressing.
  • Aromatics & Seasoning: Garlic, onion powder, Italian seasoning, salt, and black pepper build classic Italian flavor without being overwhelming.
  • Parmesan Cheese: A small amount of grated Parmesan adds savory depth and makes the dressing taste more complete.

How to Make Italian Dressing

You can find the complete printable recipe with measurements below, but for now, here's a quick overview of how it goes:

process 1-4

1. Combine the Ingredients: Add all the ingredients to a jar with a tight-fitting lid: extra virgin olive oil, white wine vinegar, lemon juice, Dijon mustard, honey, minced garlic, onion powder, Italian seasoning, salt, black pepper, and grated Parmesan cheese.

2. Shake Until Smooth: Secure the lid and shake the jar vigorously until all the ingredients are well combined and the Italian dressing looks creamy.

3. Taste and Adjust: Taste and adjust seasoning if needed.

4. Chill Before Serving: Refrigerate the jar for at least 30 minutes to let the flavors meld together before serving.

My Tips for Recipe Success

Let it Rest: I like to give the dressing at least 30 minutes in the fridge. That short rest makes a noticeable difference and helps the flavors come together.

Taste before Serving: I always give it one last taste after chilling and adjust the salt or acidity if needed, especially depending on what I'm using it for.

Storage

Keep refrigerated in a sealed jar for up to 1 week and shake well before each use.

Instructions

  • Add all ingredients to a jar with a tight-fitting lid.
  • Seal the jar and shake vigorously until well combined and smooth.
  • Taste and adjust seasoning if needed.
  • Store in the refrigerator for up to one week. Shake well before each use.

Notes

Blending for Creaminess: For a creamier texture, blend the ingredients in a blender until smooth. It creates a silky consistency that's perfect for drizzling over salads.
Adjusting Sweetness: If you prefer a less sweet dressing, reduce the honey to your liking. I often adjust depending on what I'm serving it with.
Extra Parmesan for Flavor: Adding more Parmesan cheese makes the dressing richer and cheesier. I like to sprinkle a little extra when serving!
Vegan-Friendly Option: Skip the Parmesan cheese for a vegan-friendly version. It still tastes great and pairs wonderfully with fresh veggies.
Using Fresh Herbs: When I have fresh herbs on hand, I swap out the dried Italian seasoning for chopped basil, oregano, and parsley for a burst of freshness.
