Instructions
Drain 2 cans tuna packed in water thoroughly. Dice 1 medium English cucumber and 2 avocados, finely chop 1 small red onion, and halve 100 g cherry tomatoes. Add everything to a large mixing bowl.
Sprinkle over ½ teaspoon salt and ¼ teaspoon freshly ground black pepper, then add the juice of ½ lemon and 2 tablespoons extra virgin olive oil.
Gently fold everything together until the tuna is evenly distributed and all the ingredients are coated with the dressing. Mix carefully to keep the avocado pieces intact rather than mashing them.
Serve immediately, or refrigerate for 15 minutes before serving. Chilling is optional.
Notes
Tuna: Water-packed tuna is the tested option. Oil-packed tuna can also be used; drain either type thoroughly.Avocado: Fold gently rather than stirring vigorously to keep the avocado in distinct pieces.Optional chilling: The total time is 10 minutes when served immediately, or 25 minutes with the optional 15-minute chill.
