Preheat the oven to 355°F (180°C) and line a baking sheet with parchment paper.
Place the fresh mint leaves and sugar in a mixing bowl and blend them together with a hand blender until the sugar turns lightly green and the mint is finely incorporated.
Add the egg and softened butter to the mint and sugar mixture and blend again until the mixture becomes smooth and well combined.
Add the flour and baking powder to the bowl and mix until a soft cookie dough forms.
Take tablespoon-sized portions of dough and shape them into cookies, placing them on the prepared baking sheet with space between each one.
Bake for about 15 minutes, or until the edges are lightly golden.
