What I like most about these mint cookies is how fresh and different they feel compared to the usual cookie recipes. Using real mint leaves gives them a lighter flavor than mint extract, and when I blend the mint with sugar, it spreads that fresh taste all through the dough. It also gives the cookies that soft, natural green color, which I really love.

  • Fresh Mint Leaves & Sugar: I like blending fresh mint leaves with sugar first because it brings out the natural mint flavor and gives these mint cookies their fresh taste and pretty color. 
  • Butter & Egg: I use softened butter for a tender texture and egg to help bring the dough together and keep the cookies soft. 
  • Flour & Baking Powder: All-purpose flour gives the cookies structure, while baking powder helps them bake up with a tender center and lightly crisp edges.

How to Make Mint Cookies with Fresh Mint

1. Blend the Mint and Sugar: In a mixing bowl, blend the fresh mint and sugar with a hand blender. Add the egg and butter, then blend again until well combined.

2. Form the Dough: Add the flour and baking powder, mixing until a dough forms.

3. Shape the Cookies: Take tablespoon-sized portions of dough, shape them into cookies, and place them on a parchment-lined baking sheet, leaving a little space between each one.

4. Bake the Cookies: Bake in a preheated oven at 356°F (180°C) for 15 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.

My Tips for Making Mint Cookies

Use Tender Mint Leaves: I like using the smaller, softer mint leaves because they blend more easily and give a smoother texture to the dough. 

Leave Space Between Cookies: These cookies spread slightly while baking, so I always leave a little space between them on the baking sheet to help them bake evenly. 

Watch the Baking Time: Mint cookies bake quickly, so removing them when the edges just begin to turn golden keeps the centers soft.

Storage

Store the mint cookies in an airtight container at room temperature for up to 3 days to keep them soft. If you want to keep them longer, you can refrigerate them for up to 1 week or freeze them in a sealed container for up to 2 months. Let frozen cookies come to room temperature before serving.

Ingredients 

  • 20 g fresh mint leaves
  • 100 g sugar
  • 1 egg - room temperature
  • 100 g butter - softened
  • 200 g all-purpose flour
  • 3 g baking powder

Instructions

  • Preheat the oven to 355°F (180°C) and line a baking sheet with parchment paper.
  • Place the fresh mint leaves and sugar in a mixing bowl and blend them together with a hand blender until the sugar turns lightly green and the mint is finely incorporated.
  • Add the egg and softened butter to the mint and sugar mixture and blend again until the mixture becomes smooth and well combined.
  • Add the flour and baking powder to the bowl and mix until a soft cookie dough forms.
  • Take tablespoon-sized portions of dough and shape them into cookies, placing them on the prepared baking sheet with space between each one.
  • Bake for about 15 minutes, or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Blend the Mint Well: I like to blend the fresh mint and sugar until the sugar turns lightly green. This helps release the natural oils from the mint and gives the cookies a more even flavor. 
Do Not Overbake: I take the cookies out as soon as the edges start to turn lightly golden. That helps keep the centers soft and prevents them from drying out. 
Keep the Cookie Size Even: I try to shape the cookies in similar sizes so they bake evenly. This makes it much easier to get a batch where every cookie has the same soft texture.
