Ingredients 

  • 250 g peanut butter - creamy or chunky
  • 200 g white sugar
  • 1 large egg - room temperature

Instructions

  • Preheat your oven to 350°F/175°C (310°F convection / 155°C fan). Line a baking tray with parchment paper.
  • In a large bowl, combine peanut butter, sugar, and egg. Stir until a thick dough forms.
  • Scoop out small portions of dough (about 1.5 tablespoons each /35 g) and roll them into balls. Place them on the prepared baking tray.
  • Use a fork to press each cookie down in a crisscross pattern. Bake for 10-12 minutes or until the edges are set.
  • Let the cookies rest on the tray for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

Mix Everything Well: I stir the peanut butter, sugar, and egg together until the dough is smooth and thick; it only takes a minute, but I find it makes a big difference in texture. 
Don’t Skip the Fork Marks: Press the tops with a fork in both directions; I always do this because it gives them that classic peanut butter cookie look and helps them bake evenly. 
Watch the Oven Time: I take them out as soon as the edges start to turn golden. They look soft at first, but they firm up as they cool. 
Cool Before Moving: Leave them on the tray for about 5 minutes before touching them; otherwise, they can break apart, and I’ve learned they’re much sturdier once slightly set.
