Slice the 3 boneless skinless chicken breasts horizontally from the thickest side to the thinnest to make 6 thin, evenly sized cutlets.
Place the chicken in a large bowl. Add ½ tsp salt, ½ tsp freshly ground black pepper, ½ tsp garlic powder, 1 tbsp paprika, and 1 tsp Italian seasoning. Drizzle with 1 tbsp extra virgin olive oil and rub the mixture over both sides of every cutlet.
Arrange the seasoned chicken on a large baking sheet in a single layer, leaving space between the pieces.
Bake the thin sliced chicken breast for 8–12 minutes. Begin checking the smaller cutlets at 8 minutes and remove each piece when the thickest part reaches 165°F (74°C).
