  • 3 boneless skinless chicken breasts - sliced horizontally into 6 thin cutlets
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder
  • 1 tablespoon paprika
  • 1 teaspoon Italian seasoning

Instructions

  • Preheat the oven to 400°F / 205°C.
  • Slice the 3 boneless skinless chicken breasts horizontally from the thickest side to the thinnest to make 6 thin, evenly sized cutlets.  
  • Place the chicken in a large bowl. Add ½ tsp salt, ½ tsp freshly ground black pepper, ½ tsp garlic powder, 1 tbsp paprika, and 1 tsp Italian seasoning. Drizzle with 1 tbsp extra virgin olive oil and rub the mixture over both sides of every cutlet.
  • Arrange the seasoned chicken on a large baking sheet in a single layer, leaving space between the pieces.  
  • Bake the thin sliced chicken breast for 8-12 minutes. Begin checking the smaller cutlets at 8 minutes and remove each piece when the thickest part reaches 165°F (74°C).
  • Remove the chicken from the oven and let it rest for a few minutes before slicing or serving. 

Notes

Slice the Chicken Evenly: I take my time cutting each breast into cutlets of similar thickness so the edges do not dry out before the center finishes cooking.  
Check Early: Because these cutlets are thin, I begin checking them at 8 minutes. Smaller pieces may reach 165°F (74°C) before the larger ones.  
Use a Meat Thermometer: I rely on the internal temperature rather than the color of the chicken. This helps me remove each piece as soon as it is safely cooked.  
Allow Time to Rest: I leave the chicken undisturbed for a few minutes after baking so more of the juices remain in the meat when it is sliced.
