This peach salad combines ripe peaches, crisp green beans, feta, and chopped hazelnuts with a honey-balsamic dressing. It makes a colorful summer side dish in just 8 minutes.
Bring a large pot of salted water to a boil. Add 300 g green beans and cook for 2–3 minutes, until bright green and crisp. Drain and allow them to cool completely.
Arrange the cooled green beans on a large serving platter. Top with 2 peaches, sliced, and ½ red onion, thinly sliced.
Scatter 100 g feta cheese, cubed, and 50 g hazelnuts, roughly chopped, evenly over the salad.
Whisk together 1 tbsp honey, 1 tbsp balsamic vinegar, 2 tbsp extra virgin olive oil, and 1 tsp salt. Drizzle the dressing over the peach salad just before serving.

Choose Firm-Ripe Peaches: I use peaches that give slightly when pressed but still feel firm enough to hold their shape once sliced.Toast the Hazelnuts: I lightly toast the hazelnuts in a dry pan until fragrant because it brings out their nutty flavor and improves their crunch.Slice the Onion Very Thinly: Red onion can easily overpower the peaches, so I cut it into very thin slices to keep its flavor gentle.Add the Dressing Last: I drizzle the honey-balsamic dressing over the salad just before serving so the peaches, beans, and hazelnuts keep their texture.
