This rotisserie chicken salad combines tender shredded chicken with crunchy celery, red onion, and a creamy Greek yogurt and mayonnaise dressing. It is quick to prepare and perfect for sandwiches, wraps, crackers, or serving over fresh greens.
1fully cooked store-bought rotisserie chicken skin and bones removed, shredded
50gfinely diced celery
120gfinely chopped red onion
75gmayonnaise
75gplain Greek yogurt
1tablespoonfresh lemon juice
1teaspoonDijon mustard
½teaspoonsalt
¼teaspoonfreshly ground black pepper
1teaspoongarlic powder
1teaspoonfinely chopped fresh dill
Instructions
Remove the skin and bones from 1 fully cooked rotisserie chicken, then shred the meat. Add the chicken to a large mixing bowl with 50 g finely diced celery and 120 g finely chopped red onion.
In a separate bowl, combine 75 g mayonnaise, 75 g plain Greek yogurt, 1 tbsp fresh lemon juice, 1 tsp Dijon mustard, ½ tsp salt, ¼ tsp freshly ground black pepper, 1 tsp garlic powder, and 1 tsp finely chopped fresh dilll.
Pour the dressing over the shredded chicken, celery, and red onion. Stir gently until all the ingredients are evenly coated.
Cover the bowl and refrigerate the chicken salad for at least 30 minutes to allow the flavors to come together.
Stir again before serving in sandwiches, wraps, croissants, or over fresh salad greens.

Choose a Mild Rotisserie Chicken: I prefer using a plain or lightly seasoned rotisserie chicken so the dill, lemon, and creamy dressing can come through clearly.Let the Chicken Cool: I find the meat easiest to remove while the chicken is still slightly warm, but I always let it cool before mixing it with the mayonnaise and Greek yogurt.Adjust the Creaminess: Rotisserie chickens can vary in size and moisture, so I sometimes add a little extra mayonnaise or Greek yogurt if the salad feels too dry.Add Extra Texture: When I want a little more crunch or sweetness, I add chopped grapes, diced apple, walnuts, or sliced almonds.
