  • Celery and Red Onion: Celery gives the salad its fresh crunch, while finely chopped red onion adds a sharper flavor that balances the creamy dressing. 
  • Mayonnaise and Greek Yogurt: I use equal amounts of both. Mayonnaise creates a smooth, familiar chicken salad texture, while Greek yogurt adds a fresh tang and keeps the dressing from feeling too rich. 
  • Lemon, Dijon and Dill: Fresh lemon juice brightens the dressing, Dijon mustard adds depth, and dill gives the salad its fresh, deli-style flavor. Garlic powder, salt, and black pepper finish the seasoning.

How to Make Rotisserie Chicken Salad

1. Prepare the Chicken and Vegetables: Start by shredding the chicken and finely chopping the celery and red onion.

2. Mix the Creamy Dressing: In a small bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, Dijon mustard, garlic powder, dill, salt, and pepper.

3. Combine the Salad: Add the chicken and veggies to a large bowl, pour over the dressing, and mix well.

4. Chill for Best Flavor: Cover and refrigerate for at least 30 minutes to let the flavors come together.

Helpful Swaps

  • Use leftover roasted or poached chicken instead of a store-bought rotisserie chicken.
  • Replace the Greek yogurt with sour cream for a slightly richer dressing.

Tips for Rotisserie Chicken Salad

Chop the Onion Very Finely: I like the red onion to add a little sharpness without taking over the salad, so I chop it into very small pieces.

Use Thick Greek Yogurt: A thick Greek yogurt keeps the dressing creamy. When there is liquid sitting on top, I pour it away before measuring.

Taste It After Chilling: I always wait until the salad has chilled before adjusting the seasoning because the lemon, dill, and mustard become more noticeable as it rests.

Mix It Gently: Folding the ingredients together rather than stirring too firmly helps the chicken keep its texture and stops the salad from becoming too soft.

Storage

I keep leftover rotisserie chicken salad in an airtight container in the refrigerator for up to three days. Give it a good stir before serving because a little moisture can settle at the bottom. I do not recommend freezing it, as the creamy dressing may separate and the vegetables will lose their crunch.

Ingredients 
 

  • 1 fully cooked store-bought rotisserie chicken  - skin and bones removed, shredded 
  • 50 g finely diced celery
  • 120 g finely chopped red onion
  • 75 g mayonnaise
  • 75 g plain Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon finely chopped fresh dill

Instructions

  • Remove the skin and bones from 1 fully cooked rotisserie chicken, then shred the meat. Add the chicken to a large mixing bowl with 50 g finely diced celery and 120 g finely chopped red onion. 
  • In a separate bowl, combine 75 g mayonnaise, 75 g plain Greek yogurt, 1 tbsp fresh lemon juice, 1 tsp Dijon mustard, ½ tsp salt, ¼ tsp freshly ground black pepper, 1 tsp garlic powder, and 1 tsp finely chopped fresh dilll. 
  • Pour the dressing over the shredded chicken, celery, and red onion. Stir gently until all the ingredients are evenly coated. 
  • Cover the bowl and refrigerate the chicken salad for at least 30 minutes to allow the flavors to come together. 
  • Stir again before serving in sandwiches, wraps, croissants, or over fresh salad greens. 

Notes

Choose a Mild Rotisserie Chicken: I prefer using a plain or lightly seasoned rotisserie chicken so the dill, lemon, and creamy dressing can come through clearly. 
Let the Chicken Cool: I find the meat easiest to remove while the chicken is still slightly warm, but I always let it cool before mixing it with the mayonnaise and Greek yogurt. 
Adjust the Creaminess: Rotisserie chickens can vary in size and moisture, so I sometimes add a little extra mayonnaise or Greek yogurt if the salad feels too dry. 
Add Extra Texture: When I want a little more crunch or sweetness, I add chopped grapes, diced apple, walnuts, or sliced almonds.
