Tirokafteri is a creamy Greek spicy feta dip made with feta, Greek yogurt, jarred roasted red peppers, chili, garlic, and olive oil. It blends together in 5 minutes, balancing salty, tangy, sweet, and gently spicy flavors.

Instructions
Add 400 g feta cheese, 150 g full-fat Greek yogurt, 3 jarred roasted red peppers, 1 red chili pepper, 2 cloves garlic , 120 ml extra virgin olive oil, 2 tbsp white wine vinegar, 1 tbsp sweet paprika, ¼ tsp red pepper flakes, and 1 tsp dried oregano to a food processor.
Pulse or blend until the spicy feta dip is creamy but still slightly textured from the feta.
Transfer the tirokafteri to a serving bowl or plate and spread it evenly with the back of a spoon.
Top with crumbled feta, chopped parsley, sweet paprika, dried oregano, and a drizzle of extra-virgin olive oil. Serve immediately or refrigerate until ready to serve.
Notes
Choose Block Feta: I use block feta rather than pre-crumbled cheese because it blends more smoothly and gives the dip a better texture. Drain the Peppers Well: Jarred roasted red peppers hold plenty of liquid, so I drain them thoroughly to prevent the dip from becoming too loose. Adjust the Heat: Remove the seeds from the red chili for a milder dip, or leave some in when you want a stronger kick. Optional Chilling: You can serve the dip immediately, but I like refrigerating it for at least 30 minutes when time allows so the flavors can settle.
