Some cakes just hit the spot without needing a long list of ingredients or steps, and this one is exactly that. I make this 4-ingredient yogurt cake whenever I want something sweet but easy, especially on quiet weekends when I’m not in the mood for a full baking project. Just eggs, sugar, yogurt, and cornstarch come together to make a soft, moist cake with a subtle tang that keeps you coming back for another slice. Recipe includes a how-to video!

This flourless cake is so versatile, and that’s what I love about it. You can enjoy it just as it is, dusted with a little powdered sugar, or topped with fresh fruit for a light dessert recipe that feels a bit more special.

I usually add some whipped cream and berries during the warmer months, it’s simple healthy dessert perfection.

Since it’s a no butter no flour cake, the texture stays smooth and creamy, and the yogurt adds a subtle tang that makes every bite stand out.

It also fits beautifully into gluten-free baking, and the eggs and yogurt give it a nice boost as a high-protein dessert.

I’ve played around with a few variations, sometimes a splash of vanilla, other times a swirl of fruit puree for something different.

Here is a list of everything you need:

  • Eggs: I prefer using fresh, room-temperature eggs. They help hold everything together and add moisture and richness to the cake.
  • Sugar: I use granulated sugar to sweeten the cake and balance the yogurt’s tanginess. It also keeps the cake soft and gives it a golden crust. You can swap it for raw or brown sugar if you like.
  • Yogurt: I use natural yogurt, also at room temperature. It keeps the cake moist and adds a nice tangy flavor.
  • Cornstarch: Cornstarch is my go-to for this recipe. It makes the cake soft and light without the heaviness of regular flour.

1. Prepare Batter: Whisk eggs and sugar until well blended, then add yogurt and whisk until combined.

2. Add Cornstarch: Sift in cornstarch and whisk until smooth.

3. Bake: Pour mixture into a parchment-lined baking bowl. Bake at 200ºC/392°F  for 12 minutes, then at 180ºC/356°F for 45 minutes, and finally at 170ºC/338°F for 5 minutes.

4. Cool and Serve: Cool to room temperature, refrigerate for 2 hours, remove parchment, and serve.

📖Variations

  • Lemon Sugar: Add lemon sugar instead of normal sugar to add a refreshing lemon flavor. 
  • Spices: For extra flavor, you can add different spices like cardamon, ginger, cinnamon, vanilla, almond extract, orange extract, etc.

💭Tips for Recipe Success

Use Room Temperature Ingredients: Make sure the eggs and yogurt are at room temperature to create a smoother batter.

Don’t Overmix: Stir the batter just until the ingredients are combined. Overmixing can lead to a dense cake.

Check for Doneness: Insert a toothpick into the center of the cake; it should come out clean when fully baked.

Storage Tips: Store leftovers in an airtight container in the refrigerator for up to three days.

Ingredients 

  • 5 Eggs
  • 60 g Sugar
  • 500 g Yogurt
  • 50 g Cornstarch

Instructions

  • Add eggs and sugar to the mixing bowl, whisk with a balloon whisk, and mix well everything to combine.
  • Add yogurt to the egg-sugar mixture and whisk and mix well everything to combine.
  • Sieve through the cornstarch into the egg mixture, whisk, and mix well until everything is fully combined.
  • Put the baking paper in a baking bowl and pour the cake mixture inside.
  • Bake in a preheated oven first 12 mins @ 200ºC then 180ºC for 45 mins then 170ºC for 5 mins.
  • Remove from the oven, let it cool down to room temperature, and then refrigerate for 2 hours.
  • Remove from the fridge, remove the paper, and ready to serve.

Notes

Use Quality Ingredients: Choose fresh, full-fat yogurt for a rich flavor, and make sure to use good-quality eggs.
Mixing the Yogurt: Whisk the yogurt well with the egg and sugar mixture so the flavor spreads evenly throughout the cake.
Sifting Cornstarch: Sift the cornstarch before adding it. This helps avoid lumps and gives you a smooth, even batter.
Baking Tips: Start baking at 200ºC for 12 minutes to help the cake rise and form a nice crust. Then lower the temperature to bake it through evenly.
Cooling and Chilling: Let the cake cool to room temperature before refrigerating. Chilling for at least 2 hours makes it easier to slice and improves the flavor.
Storage: If you're not eating it right away, keep the cake in the fridge. It stays fresh for a few days and tastes great cold or at room temperature.
