  • Butter, Sugar & Flour: I use butter, sugar, salt, and flour to create the shortbread base. It bakes into a firm, buttery layer that holds the caramel perfectly. 
  • Butter, Condensed Milk & Golden Syrup: The caramel layer comes together with butter, sugar, golden syrup, and condensed milk. As it cooks, it thickens into a smooth caramel that spreads easily over the shortbread. 
  • Milk Chocolate: A layer of melted milk chocolate finishes the bars. I like using milk chocolate because it balances the sweetness of the caramel and adds a smooth topping.

How to Make Millionaire's Shortbread

1. Make the Shortbread Base: In a bowl, mix soft butter, sugar, and a pinch of salt until light and fluffy, then stir in the flour to form a dough. Press the dough evenly into a parchment-lined 20 cm × 20 cm baking tray and bake at 340°F / 170°C (300°F convection / 150°C fan) for 25-30 minutes until lightly golden. Let it cool.

2. Cook the Caramel Layer: In a small saucepan, melt butter, sugar, golden syrup, and condensed milk over medium heat, stirring constantly. Let it gently boil while stirring until it thickens and turns a golden caramel color.

3. Add the Caramel: Pour the caramel over the cooled shortbread base and spread it evenly across the surface. Allow it to cool.

4. Finish with Chocolate: Melt the chopped milk chocolate using a double boiler, then pour it over the caramel layer and spread evenly. Chill the Millionaire's shortbread in the fridge for about 1 hour, then cut into squares.

My Tips for Millionaire's Shortbread

Line the Pan with Parchment Overhang: I like leaving a little parchment hanging over the sides of the pan. It makes lifting the whole slab out much easier once the layers are set. 

Cook the Caramel over Medium Heat: Keeping the heat steady helps the caramel thicken evenly and prevents it from becoming grainy. 

Spread the Caramel while it is still Warm: Warm caramel spreads much more easily, which helps create a smooth and even layer over the shortbread. 

Warm the Knife before Slicing: Running the knife under hot water and drying it helps it glide through the chocolate layer and gives cleaner cuts. 

Storage

Store millionaire's shortbread in an airtight container in the fridge for up to 1 week. I like taking it out a few minutes before serving so the caramel softens slightly.

Ingredients 

Shortbread Base

  • 150 g unsalted butter - room temperature
  • 85 g sugar
  • ½ teaspoon salt
  • 225 g all-purpose flour

Caramel Layer

  • 120 g unsalted butter
  • 25 g sugar
  • 75 g golden syrup
  • 397 g condensed milk - 1 can

Chocolate Topping

  • 200 g milk chocolate - 2 tablets

Instructions

  • Beat the butter, sugar, and salt in a bowl until light and fluffy. Add the flour and mix until a soft dough forms. Press the dough evenly into a parchment-lined 20 cm x 20 cm baking tray.
  • Bake in a preheated oven at 340°F / 170°C (300°F convection / 150°C fan) for 25-30 minutes, or until the shortbread is lightly golden. Remove from the oven and let it cool completely in the pan.
  • In a small saucepan, add the butter, sugar, golden syrup, and condensed milk. Cook over medium heat, stirring continuously, until everything melts and combines. Let the mixture come to a gentle boil and keep stirring until it thickens and turns a rich golden caramel color.
  • Pour the caramel over the cooled shortbread base and spread it evenly. Leave it to cool until the caramel layer has set.
  • Melt the milk chocolate in a heatproof bowl over a pan of gently simmering water, stirring until smooth. Pour the melted chocolate over the caramel and spread it evenly.
  • Let the millionaire's shortbread cool completely, then refrigerate for about 1 hour, or until fully set. Lift it out of the tray and cut into squares.

Notes

Stir the Caramel Continuously: I find this helps keep it smooth and prevents it from catching on the bottom of the pan. 
Let each Layer Cool: Allowing the layers to cool before adding the next one keeps them neat and well defined. 
Chill before Slicing: I like to refrigerate the bars before cutting so the chocolate sets firmly and the slices come out clean.
