The first time I made cottage cheese ice cream, I was surprised by how creamy and refreshing it turned out with just two ingredients. Now I rotate between my favorite summer flavors, raspberry, apricot, kiwi, and pineapple.

What I really enjoy about this cottage cheese ice cream is how quick and flexible it is. Whether I'm using frozen berries or fruit I picked up at the market, it comes together fast, no fancy equipment, no baking, and no long prep.
The cottage cheese blends into a creamy base that's surprisingly smooth and slightly tangy, which works beautifully with bright, fruity flavors.
You'd never guess this protein ice cream starts with something so simple.
It's become one of those recipes I always come back to, especially in the warmer months. I like to make a few small batches at a time, each with a different fruit, and keep them ready in the freezer.
The texture stays creamy, and the flavors only get better with time. If you're looking for a refreshing cottage cheese dessert that's naturally sweet, light, and satisfying, this one's hard to beat.

People are always surprised when I tell them the base is cottage cheese, it just sounds unusual for ice cream. But once they try it, they get it.
It's rich without being heavy, and the blend of fruit and protein makes it feel like a treat that actually keeps you full.
I sometimes add a bit of honey or maple syrup if the fruit is extra tart, but often I just let the fruit speak for itself.
For something special, I'll swirl two flavors together for a layered, marbled effect.
Whether you're into viral cottage cheese ice cream trends or just want an easy, protein-packed frozen dessert, this is one recipe you'll want to keep around.

💭Tips for Recipe Success
Chill the Blender Bowl First: I like to pop my blender cup or food processor bowl in the freezer for 10-15 minutes; it keeps the mixture colder and helps it set faster.
Strain for a Smoother Texture: If you don't like seeds from raspberries or kiwi, strain the blended mix through a fine mesh sieve for a silkier scoop.
Make Mini Portions: Freeze in silicone muffin cups or popsicle molds for perfect grab-and-go servings.
Add Mix-Ins: Stir in coconut flakes, chocolate chips, or diced dried fruit after blending for extra texture and flavor.
Use it as a Smoothie Bowl Base: The soft-serve version is great topped with granola and fresh fruit for a chilled breakfast.
Storage: Store in an airtight container with parchment on top to prevent ice crystals. Freeze for up to 1 week and let sit 5-10 minutes before scooping.
