Because the recipe takes 30 minutes, it suits evenings when I still want dinner to feel considered.

The sauce is creamy and aromatic, with lemongrass leading and mild chile adding gentle warmth. I blend the onion, garlic, and ginger first, creating a smooth foundation for the coconut milk. Straining the thickened sauce makes it silky, while pan-searing keeps the salmon distinct from the sauce. My pan-seared rockfish uses a similarly direct stovetop method, but this salmon gains richness from coconut milk. That contrast makes every bite feel balanced rather than heavy.

  • Skin-on salmon fillets: I start the salmon skin-side down, giving it direct contact with the hot pan before turning.
  • Coconut milk and lemongrass: The creamy coconut and aromatic lemongrass give me the Thai restaurant-inspired flavor I wanted.
  • Onion, garlic, and ginger: I blend these aromatics into a paste so they form a smooth foundation for the sauce.
  • Chile and dried lime leaves: For me, the mild chile brings gentle warmth while the lime leaves deepen the aroma.

How to Make Thai Coconut Salmon

Prepare the sauce first, then pan-sear the salmon just before serving.

Blending the aromatic paste, simmering the coconut sauce, seasoning and pan-searing the salmon, then plating it with the sauce.

1. Blend the aromatic base: Process the onion, garlic, ginger, and coconut oil until a smooth paste forms.

2. Simmer and strain the sauce: Cook the paste, add the coconut milk and aromatics, then simmer until thickened. Strain and keep warm.

3. Pan-sear the salmon: Season and oil the fillets. Cook skin-side down in a hot pan, turn, and cook to 145°F (63°C).

4. Plate the dish: Spoon the warm coconut sauce around the salmon, then finish with cherry tomatoes and cilantro.

  • Prepare the sauce first: Keeping the finished sauce warm lets you serve the salmon immediately after it leaves the pan.
  • Scale every component evenly: Increase the salmon, sauce, aromatics, and garnishes proportionally when preparing additional servings.
  • Add the garnishes last: Halved cherry tomatoes and chopped cilantro provide fresh color and texture against the creamy sauce.

Storage

I did not have leftovers from this batch. If you do, I recommend refrigerating them in an airtight container for up to two days and reheating them in the microwave.

What to Serve with Thai Coconut Salmon

I served this Thai coconut salmon with boiled jasmine rice, which absorbs the creamy sauce beautifully. Basmati or regular long-grain rice also complements it, while my rice with chicken broth and butter offers a richer option. The salmon can also be served alone because the coconut sauce makes it feel complete.

Ingredients 
 

  • 240 g skin-on salmon fillets - 2 fillets
  • ½ medium onion - cut into four pieces
  • 1 garlic clove
  • ½ inch piece fresh ginger
  • 2 tablespoons coconut oil
  • 1½ teaspoons salt
  • 400 ml canned full-fat coconut milk
  • 1 lemongrass stalk - crushed
  • 1 mild red chile
  • 4 dried lime leaves - optional
  • 1 teaspoon extra virgin olive oil - for coating the salmon
  • ¼ teaspoon ground black pepper - for seasoning the salmon
  • 3 cherry tomatoes - halved
  • 1 tablespoon fresh cilantro - finely chopped, for garnish

Instructions

  • Place ½ medium onion, 1 garlic clove, ½ inch piece fresh ginger, and 2 tablespoons coconut oil in a blender. Blend until a smooth paste forms.
  • Transfer the paste to a skillet and cook for about 2 minutes. Add 1 teaspoons salt and cook for another 30 seconds.
  • Pour in 400 ml canned full-fat coconut milk and bring it to a simmer. Add the 1 lemongrass stalk, 1 mild red chile and 4 dried lime leaves. Bring the sauce to a boil, reduce to a simmer and cook for 10-15 minutes, until thickened.
  • Remove the sauce from the heat. For a smoother sauce, strain it through a fine-mesh sieve. Keep it warm while cooking the salmon.
  • Season the 240 g skin-on salmon fillets (2 fillets) with ½ teaspoons salt and ¼ teaspoon ground black pepper. Coat them lightly with 1 teaspoon extra virgin olive oil.
  • Place the salmon skin-side down in a hot pan. Cook for about 2 minutes, turn and cook the other side for about 2 minutes, or until the center reaches 63 °C.
  • Serve the pan-seared salmon with the warm coconut sauce. Garnish with the 3 cherry tomatoes halved and 1 tbsp fresh cilantro finely chopped.

Notes

Crushing the lemongrass: Bruising the stalk releases its aroma while keeping it easy to remove before serving.
Controlling the sauce: Keep the coconut mixture at a gentle simmer after boiling so it thickens without cooking too aggressively.
Straining is optional: Pass the sauce through a fine-mesh sieve for a smoother consistency, or leave it unstrained.
Checking doneness: Cook the salmon until its center reaches 145°F (63°C), avoiding unnecessary extra cooking that can dry it out.
