Ingredients
- 250 g Mascarpone Cheese - Room temperature
- 6 tablespoon Heavy Whipping Cream
- 250 ml Heavy Whipping Cream
- 80 g Sugar
- 2 teaspoon Vanilla
- 22-24 Lady Fingers - Savoiardi brand
- 300 ml Instant Coffee
- Cocoa Powder
Instructions
- In a bowl, beat the mascarpone cheese with 3 tablespoons of heavy whipping cream using a hand mixer. Add the remaining 3 tablespoons and continue beating until the mixture is smooth and creamy.
- In a separate bowl, whip 1 cup (250 ml) of heavy whipping cream with the sugar and vanilla until soft peaks form.
- Gently fold the mascarpone mixture into the whipped cream until fully combined.
- Quickly dip each lady finger into the cold coffee and layer them in the bottom of a pan.
- Spread half of the mascarpone mixture evenly over the lady fingers.
- Repeat with a second layer of dipped lady fingers and the remaining mascarpone mixture.
