I started making this healthy white chicken chili on evenings when I wanted something warm and satisfying but still balanced. Instead of heavy cream or cream cheese, I use a spoonful of Greek yogurt, which gives the broth a creamy texture without making it rich. Combined with soft white beans, juicy chicken, and mild green chilies, it creates a cozy bowl that feels light but still comforting. 

What I enjoy most is how quickly it comes together with everyday ingredients. The chicken simmers gently on the stovetop, the pureed beans help thicken the broth, and the lime brightens everything at the end. It's an easy, wholesome dinner I make throughout the year.

  • Green Chilies & Spices: I like using canned green chilies with cumin, paprika, oregano, and chili powder. They give just the right kick, enough heat to keep it interesting but not overwhelming.
  • Chicken, Beans & Corn: For me, this is the heart of the dish. The chicken stays juicy, the beans make it hearty, and the corn adds a little sweetness. I never skip.
  • Greek Yogurt or Sour Cream & Lime: These two are what make the broth creamy and bright. I always stir them in last so the chili has that silky finish with a fresh pop of flavor.

1. In a big pot, warm extra virgin olive oil over medium heat. Cook chopped onion until clear, about 5-7 minutes. Add minced garlic and cook 1-2 minutes until it smells good.

2. Stir in diced green chilies, cumin, paprika, oregano, chili powder, salt, and pepper. Cook for 1 minute, stirring to toast the spices.

3. Add chicken broth, lime juice, and chicken breasts. Bring to a boil, then cover, simmer on medium-low for 10-15 minutes until the chicken is juicy and fully cooked.

4. Place the chicken breasts on a cutting board, shred them with two forks, and set aside.

5. Blend half a can of beans with a little water until smooth, then add them to the soup.

6. Add the drained white beans and corn, then simmer for 10 minutes until heated and flavorful.

7. Lower the heat, then mix in the shredded chicken, parsley, and Greek yogurt or sour cream. Let it heat for about a minute, stirring occasionally. Finally, taste and adjust the seasoning as needed.

8. Serve hot with fresh cilantro, tortilla chips, and avocado for the perfect finishing touch. Then, sit back, relax, and enjoy your tasty white chicken chili!

Blend Some Beans: I like to puree just a bit of the beans before adding them back in; it's my shortcut to that creamy texture without using extra dairy or cream cheese.

Don't Overcook the Chicken: I always pull the chicken out the moment it's cooked through. Shredding it right away keeps it moist instead of drying out in the pot.

Storage: This chili thickens beautifully overnight. Store it airtight and add a splash of broth when reheating.

Ingredients 

For White Chili:

  • 3 tablespoon Extra Virgin Olive Oil
  • 1 Yellow Onion - Chopped
  • 4 Cloves Garlic - Minced
  • 1 can Green Chilies - Diced
  • 1 tablespoon Ground Cumin
  • ½ teaspoon Paprika
  • ¾ teaspoon Dried Oregano
  • ½ teaspoon Chili Powder
  • 1 tps Salt
  • ½ teaspoon Black Pepper - Freshly ground
  • 700 ml Chicken Broth
  • 1 tablespoon Fresh Lime Juice
  • 400 g Boneless Skinless Chicken Breasts
  • 2 cans White Beans
  • 200 g Corn - Frozen or Fresh
  • 1 teaspoon Parsley - Dried
  • 250 g Plain Greek Yogurt or Sour Cream

For Garnish:  

  • 1 tablespoon Fresh Cilantro - Chopped
  • Tortilla Chips
  • 1 Avocado - Sliced

Instructions

  • In a large pot, heat the extra virgin olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5-7 minutes. Stir in the minced garlic and cook for another 1-2 minutes, stirring often, until fragrant. 
  • Stir in the diced green chilies, cumin, paprika, dried oregano, chili powder, salt, and black pepper, cooking for 1 minute to toast the spices.
  • Pour in the chicken broth and fresh lime juice, then add the chicken breasts. Bring the mixture to a boil, reduce the heat to medium-low, and simmer for 10-15 minutes, until the chicken is fully cooked. Transfer the chicken to a cutting board and shred it with two forks. Set aside.
  • Place half a can of beans in a food processor with a little water and blend until smooth, then stir the mixture back into the pot. Add the remaining white beans and corn, stirring well. Simmer for 10 minutes so the flavors combine.
  • Return the shredded chicken to the pot, add the dried parsley and plain Greek yogurt or sour cream, and stir over low heat for 1 minute.
  • Taste and adjust the seasoning if needed, then serve hot with fresh cilantro, tortilla chips, and avocado.

Notes

Shred the Chicken Well: I like to pull it into small pieces so it blends smoothly into the chili and every spoonful has chicken.
Adjust the Heat: I like to go light on the chili powder when serving kids and set hot sauce on the table for extra spice.
Fresh Lime Finish: I always squeeze fresh lime juice in at the end because it makes the flavors brighter and more lively.
Next-Day Flavor: I like to reheat leftovers the next day since the chili tastes even richer after resting overnight.
