Easy Blueberry Crumble Recipe Without Oats (Crisp Topping)

I usually make it when I want something warm and cozy after a long day, no mixer, no chilling, no fuss. Just mix, layer, bake, and you've got dessert. Whether I serve it warm with ice cream or just take a spoon straight to the dish, this blueberry crumble always hits the spot.

This is one of those easy blueberry desserts that's hard to mess up. If you're looking for blueberry recipes easy enough for a weeknight, this one delivers. You can use fresh or frozen fruit, and while it's perfect on its own, it's even better with vanilla ice cream.

Why You'll Love My Recipe

  • It's Made with Ingredients You Already Have: No special ingredients needed, just everyday pantry staples.
  • Works with Fresh or Frozen Blueberries: You can make this year-round, no matter what's in season.
  • The Crumble Topping Is Crisp and Buttery: Melted butter helps the topping bake into golden, crunchy clumps every time, without oats.

Ingredients

You'll find the exact measurements in the recipe card, but here's a closer look at a few of the ingredients and why I use them.

  • Blueberries & Lemon Juice: Fresh blueberries bake into a jammy filling, and a splash of lemon keeps the flavor bright and not overly sweet.
  • Flour & Sugar: A little flour thickens the berries, while sugar sweetens and helps the topping bake into that lightly crisp finish.
  • Butter & Cinnamon: Melted butter makes the crumble easy to mix and creates golden clusters, with cinnamon adding cozy warmth.
  • Salt: Just a pinch in both the filling and topping ties everything together and balances the sweetness beautifully.

How to Make Blueberry Crumble

You can find the complete printable recipe with measurements below, but for now, here's a quick overview of how it goes:

How to Make Blueberry Crumble

1. Prepare the Blueberry Filling: In a bowl, mix blueberries with sugar, flour, lemon juice, and salt until well coated.

2. Assemble the Filling: Transfer to a baking dish and spread evenly.

3. Make the Crumble Topping: In a bowl, combine the flour, sugar, salt, and cinnamon. Pour in the melted butter and stir until soft crumbles form.

4. Bake Until Golden and Bubbling: Sprinkle the topping over the berries without pressing down. Bake at 190°C (375°F) for 35-40 minutes, until golden and bubbling.

Variations

  • Mixed Berry Crumble: Swap half of the blueberries with raspberries, blackberries, or chopped strawberries.
  • Oat Crumble Topping: Replace ½ cup of the flour in the topping with rolled oats. It gives the crumble a heartier texture and a slightly toasty flavor that works really well with the fruit.
  • Nutty Blueberry Crumble: Mix ¼ cup of chopped almonds, walnuts, or pecans into the crumble topping. I love how the nuts add a light crunch and make the topping even more satisfying.

My Tips for Recipe Success

Use a Glass or Ceramic Dish for Best Results: I find that glass or ceramic distributes heat more evenly, which helps the filling cook through while the topping gets that perfect golden crunch.

Watch for Bubbling Edges: One of the best signs that your crumble is ready is when you see the fruit juices bubbling up around the edges, this means the filling has thickened, and the topping is baked.

Serve It in Individual Ramekins: For something a little more special, divide the crumble into ramekins before baking. It makes for cute, single-serve portions and saves on scooping later.

Storage: I usually keep any leftover blueberry crumble in an airtight container in the fridge for up to 3 days. When I reheat it, I like to pop it back in the oven so the topping stays crisp instead of soft.

Instructions

  • Preheat the oven to 375°F/190°C (338°F/170°C fan-assisted).
  • In a large bowl, combine the blueberries, sugar, flour, lemon juice, and salt. Gently stir until the berries are fully coated, and everything looks evenly mixed. Pour the blueberry mixture into the prepared baking dish, spreading it out into an even layer.
  • In a separate bowl, mix together the flour, sugar, salt, and cinnamon for the topping. Add the melted butter to the dry ingredients and stir until the mixture turns into soft, crumbly clumps.
  • Spread the crumble topping evenly over the blueberry filling, making sure to cover all the fruit without pressing it down.
  • Place the dish in the center of the oven and bake for 35-40 minutes, or until the topping is golden brown and the blueberry filling is bubbling around the edges.
  • Remove from the oven and let it cool for 10-15 minutes before serving so the filling can set slightly.

Notes

Use Frozen Blueberries If Needed: I've made this with frozen berries when fresh ones weren't available, just thaw them first and drain off the extra liquid.
Don’t Press the Topping Down: Leaving the crumble loose creates a crisp, golden top that contrasts beautifully with the soft fruit underneath.
Let It Rest before Serving: Giving it 10–15 minutes out of the oven helps the filling thicken slightly and makes it easier to serve.
Reheat Leftovers in the Oven: I prefer warming it up in the oven rather than the microwave to keep the topping crisp.
