1. Marinate the Chicken: Slice the chicken, season with garlic, white wine, salt, black pepper, and cornstarch, and let it rest for 10 minutes.

2. Prep the Vegetables: Prep the vegetables by slicing the carrots and scallions and cutting the asparagus into pieces.

3. Mix the Sauce: Whisk chicken broth, cream, and cornstarch in a jar for a smooth sauce.

4. Cook and Finish the Dish: Sear chicken in extra virgin olive oil, add carrots and asparagus, then pour in the sauce. Stir, cover, cook briefly, add scallions and parsley, and finish until thickened.

Ingredients 

  • 2 Chicken Breasts - Sliced
  • 2 Cloves Garlic - Minced
  • 30 ml White Wine
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper - Freshly ground
  • 1 tablespoon Cornstarch
  • 2 Carrots - Sliced
  • 1 Bunch of Asparagus - Sliced
  • 4 Scallions - Sliced
  • 20 ml Wine
  • 120 ml Chicken Broth
  • 3 tablespoon Heavy Cream
  • 4 teaspoon Cornstarch
  • 3 tablespoon Extra Virgin Olive Oil
  • Parsley - Chopped

Instructions

  • Slice the chicken and mix it in a bowl with garlic, white wine, salt, black pepper, and cornstarch. I let it rest for 10 minutes so the flavors soak in.
  • Slice the carrots and scallions and cut the asparagus into pieces before cooking; this way, everything is ready to go.
  • Whisk the chicken broth, cream, and cornstarch in a jar. It's easier to pour later and keeps the sauce smooth.
  • Heat the extra virgin olive oil in a skillet over medium-high heat and sear the chicken for about 5 minutes, or until lightly golden. Add the carrots and asparagus, stirring to combine. Pour in the sauce, stir well, cover, and cook for 1 minute. Uncover, add the scallions and parsley, and cook for 1 more minute until the sauce thickens. Serve immediately. 

Notes

Marinate Briefly: I like to give the chicken 10 minutes in the garlic, wine, and cornstarch so the flavor has time to sink in.
Prep the Veggies First: I always slice the carrots, scallions, and asparagus before I start cooking, so the skillet part goes smoothly.
Mix the Sauce Ahead: I whisk the broth, cream, and cornstarch in a jar because it pours easily and never gets lumpy.
Finish with Parsley: I like to stir in parsley at the very end, it makes the dish feel fresh and bright.
