One-Pan Creamy Garlic Chicken

This one-pan creamy garlic chicken pairs golden chicken cutlets with a silky white wine cream sauce built around nine whole garlic cloves and fresh thyme. The chicken and sauce cook in the same skillet, bringing the complete dinner together in 25 minutes.

I still associate that aroma of garlic cooking with chicken and wine with the moment everyone was ready to sit down and eat. This recipe has that same generous approach to garlic, but the cream, broth, and fresh thyme give it a softer weeknight character. It also has its own place beside my creamy garlic Parmesan chicken; that version relies on Parmesan, Dijon mustard, and lemon, while this one gets its depth from whole garlic cloves and reduced white wine. 

What I enjoy most is the contrast between the golden chicken and the smooth sauce surrounding it. Slicing the breasts into thin cutlets, much like I do for chicken paillard, helps them cook evenly before they return briefly to the pan. The flour supports the browning, while the white wine releases the flavorful bits left behind in the skillet-a technique that also gives my chicken Marsala without cream its depth. Once the broth and cream go in, the sauce becomes silky enough to coat the chicken while the softened garlic cloves keep their shape and add pockets of mellow flavor.

These ingredients work together to create golden chicken and a smooth sauce with layers of garlic and white wine flavor.

  • Chicken Breasts and All-Purpose Flour: I slice the breasts into thin cutlets so they cook quickly and evenly. A light coating of flour helps them develop a golden surface and gives the sauce a little body.  
  • Whole Garlic Cloves and Fresh Thyme: The smashed cloves soften in the butter rather than disappearing into the sauce. Fresh thyme adds a gentle herbal note without overpowering the garlic.  
  • Dry White Wine and Chicken Broth: The wine loosens the browned bits and reduces before the broth goes in. I like how this builds flavor directly in the skillet without requiring a long cooking time.  
  • Heavy Cream, Butter, and Garlic Powder: Heavy cream creates the silky finish, while butter carries the flavor from the pan. Garlic powder rounds out the sauce without replacing the whole cloves. 

How to Make Creamy Garlic Chicken

How to Make Creamy Garlic Chicken

1. Prepare the Chicken: Cut the chicken breasts lengthwise into four even cutlets, season with salt and pepper, and dredge lightly in flour.

2. Sear the Cutlets: Heat the olive oil and 1 tablespoon butter in a skillet, then sear the chicken for 3-4 minutes per side until golden. Transfer to a plate.

3. Build the Garlic and Wine Base: Lower the heat, melt the remaining butter, and sauté the smashed garlic for 2 minutes. Add the thyme and white wine, scraping up the browned bits, and let it reduce by half.

4. Finish the Sauce & Return Chicken: Stir in the broth, cream, and garlic powder, simmer until thickened, then return the chicken to the pan and warm through before serving with parsley.

Tips for Creamy Garlic Chicken

Cut the Chicken Evenly: I try to make all four cutlets a similar thickness so they finish cooking at the same time and none of them dry out.  

Keep the Browned Bits: Do not wipe the skillet after searing the chicken. Those golden bits dissolve into the wine and give the sauce much of its savory depth.  

Return the Chicken Briefly: The cutlets have already spent several minutes in the hot skillet, so they only need enough time in the sauce to finish cooking and warm through.  

Serve While the Sauce Is Silky: I prefer serving this straight from the skillet because the sauce is at its smoothest before it begins to cool and thicken. 

Storage

I store leftover creamy garlic chicken in an airtight container in the refrigerator. The sauce thickens as it cools, so I reheat it gently over low heat with a small splash of chicken broth or water to loosen it without reducing it further.

What to Serve with Creamy Garlic Sauce Chicken

I usually serve this chicken with something that can catch the creamy sauce, such as rice cooked with chicken broth and butter or Greek lemon roasted baby potatoes. For a fresher contrast, Spanish tuna and tomato salad works well beside the rich sauce. Crusty bread is also useful for scooping up the softened garlic cloves and anything left in the skillet.

Ingredients 
 

  • 2 boneless skinless chicken breasts
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 30 g all-purpose flour - for dredging
  • 2 tablespoon extra virgin olive oil
  • 2 tablespoon butter - divided
  • 9 garlic cloves - peeled and smashed
  • 3 fresh thyme sprigs
  • 120 ml dry white wine
  • 240 ml chicken broth
  • 120 ml heavy cream
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh chopped parsley leaves - optional

Instructions

  • Slice 2 boneless skinless chicken breasts horizontally to make 4 thin, evenly sized cutlets. Season both sides with ½ tsp salt and ¼ tsp freshly ground black pepper, then coat them lightly with 30 g all-purpose flour. Shake off any excess.  
  • Heat 2 tbsp extra virgin olive oil and 1 tbsp butter in a large skillet over medium-high heat. Add the chicken cutlets and sear for 3-4 minutes per side, until golden. Transfer them to a plate.  
  • Reduce the heat to low and melt the remaining 1 tbsp butter in the same skillet. Add 9 garlic cloves, smashed, and cook for 2 minutes, stirring occasionally and keeping the garlic from turning dark brown.  
  • Add 3 fresh thyme sprigs and pour in 120 ml dry white wine. Scrape the bottom of the skillet to release the browned bits, then simmer for 1-2 minutes, until the wine has reduced by about half.
  • Stir in 240 ml chicken broth, 120 ml heavy cream, and 1 tsp garlic powder. Simmer gently for 8-10 minutes, stirring occasionally, until the creamy garlic sauce lightly coats the back of a spoon.  
  • Return the chicken cutlets to the skillet and cook for about 2 minutes, spooning the sauce over them, until warmed through and the thickest part reaches 165°F (74°C).  
  • Remove the thyme sprigs, sprinkle with 1 tbsp fresh chopped parsley leaves if using, and serve the creamy garlic chicken warm. 

Notes

Give the Chicken Space: I sear the cutlets in batches if they do not fit comfortably in the skillet. Leaving space around them helps the flour coating turn golden instead of steaming.  
Keep the Garlic Pale: Whole cloves become mellow as they soften, but they can taste bitter if they brown too deeply. I lower the heat before adding them and stir them occasionally.  
Reduce the Wine Properly: Let the wine bubble until it has reduced by about half before adding the broth and cream. This gives the sauce a more concentrated flavor without leaving it watery.  
Watch the Sauce Closely: I stop simmering when the sauce lightly coats the back of a spoon. It continues to thicken slightly once the chicken returns to the skillet.
