- 100 ml chicken broth
- 200 ml heavy cream or whipping cream
- 1 teaspoon Dijon mustard - optional
- 50 g freshly grated Parmesan cheese
- 1 tablespoon lemon juice
- 1 tablespoon chopped parsley
Instructions
- Pat 3 boneless skinless chicken breast, about 1½ lb (680 g), dry with paper towels. Season both sides with ½ tsp salt, ¼ tsp black pepper, 1 tsp sweet paprika, and 1 tsp garlic powder. Coat lightly with 2 tbsp all-purpose flour.
- Heat 1 tbsp extra virgin olive oil and 1 tbsp butter in a large skillet over medium heat. Add the chicken and sear for 4 to 5 minutes per side, until golden and cooked through. Remove from the skillet and set aside.
- Lower the heat to medium. Add 3 cloves garlic , minced, to the same skillet and cook for 30 seconds. Pour in 100 ml chicken broth and scrape the bottom of the pan to lift the flavor.
