One-Pot Creamy Spinach Chicken for Easy Weeknight Dinners 

I make this creamy spinach chicken recipe on nights when I want something warm and flavorful without spending much time in the kitchen. The mix of bacon, garlic, and cream turns simple ingredients into a one-pan dinner that still feels a bit special. It's ready in about 30 minutes, so even on busy evenings we can sit down to something homemade and enjoyable. How to Make Creamy Spinach Chicken

1. Sear the Chicken: Heat extra virgin olive oil in a skillet, sear the chicken 2 minutes per side until golden, then set aside.

2. Cook Aromatics: Add onion and cook 5 minutes, then stir in garlic and bacon; cook until fragrant and lightly crisp.

3. Build the Sauce: Deglaze with wine, reduce for 2 minutes, then add chicken broth, thyme, chilli flakes, and cream; bring to a gentle simmer.

4. Finish the Dish: Stir in spinach until wilted, return chicken, and cook about 5 minutes until fully cooked through. Serve creamy spinach chicken on its own or with any side dish of your choice.

I like pairing this with rice, buttered noodles, or crusty bread to soak up the sauce. A tomato burrata salad works perfectly for a refreshing contrast.

My Tips for Recipe Success

Let the Chicken Rest: If you have time, I like to let the creamy spinach chicken sit for 5 minutes off the heat before serving; it keeps the chicken extra juicy. 

Use Room Temperature Cream: I've noticed the sauce comes together more smoothly when the cream isn't straight from the fridge. 

Storage: I keep leftovers in an airtight container for up to 3 days and reheat gently with a splash of broth or cream so the sauce stays smooth.

Ingredients 

  • 6 Boneless Skinless Chicken Thighs
  • ½ teaspoon Salt
  • ¼ teaspoon Freshly Ground Black Pepper
  • 4 teaspoon Extra Virgin Olive Oil
  • 1 Onion - Chopped
  • 6 Cloves Garlic - Minced
  • 170 g Bacon - Chopped
  • 50 ml Dry White Wine or Sherry Wine
  • 120 ml Chicken Broth
  • Thyme Springs
  • ½ teaspoon Chilli Flakes
  • 200 ml Heavy Cream
  • 240 g Baby Spinach

Instructions

  • Season the chicken thighs with salt and black pepper.
  • Heat extra virgin olive oil in a large skillet. Sear the chicken thighs for about 2 minutes per side, until golden, then remove and set aside.
  • Add the chopped onion and cook for 5 minutes until softened. Stir in the minced garlic, and cook for 1 minute until fragrant. Add the bacon and cook until slightly crisp.
  • Pour in the wine to deglaze the skillet, scraping up any browned bits from the bottom. Let it reduce for about 2 minutes. Then add the chicken broth, thyme sprigs, chilli flakes, and cream. Stir well and bring the sauce to a gentle simmer. 
  • Add the spinach, stir until it wilts, and let it cook for about 2 minutes. Return the chicken to the skillet and cook until fully cooked through, around 5 minutes.
  • Remove the thyme sprigs and serve hot with your choice of sides.

Notes

Sear Until Golden: I like to give the chicken thighs a good sear; those crispy edges make the sauce taste even better.
Deglaze Well: I always scrape up every bit when adding the wine, because that’s where all the flavor hides.
Taste as You Go: I find bacon can be quite salty, so I usually hold back on extra salt until the end.
Spinach Timing: I prefer adding the spinach before the chicken goes back in; it blends into the sauce while still staying tender.
