These baked chicken thighs are seasoned with simple pantry spices and roasted until the skin is golden and crispy while the meat stays juicy and tender. It's an easy dinner recipe that delivers big flavor with very little effort.

A simple blend of garlic powder, paprika, and Italian seasoning creates a well-balanced flavor, while the high oven temperature helps the skin become beautifully crisp.   • Chicken Thighs: I use bone-in, skin-on chicken thighs because they stay juicy in the oven and the skin crisps up beautifully. 
  • Extra Virgin Olive Oil: I like using extra virgin olive oil because it helps the seasoning coat the chicken evenly and gives the skin a better roasted finish. 
  • Simple Seasonings: Salt, black pepper, garlic powder, paprika, and Italian seasoning give the chicken a balanced flavor without making the recipe complicated. 

Helpful Ingredient Swaps

  • Use smoked paprika instead of regular paprika for a deeper flavor.
  • Replace Italian seasoning with dried oregano and thyme.
  • Use avocado oil instead of olive oil if preferred.
  • Boneless chicken thighs can be used, but they will cook faster.

How to Bake Chicken Thighs

1. Season and Marinate the Chicken Thighs: Dry the chicken thighs with paper towels for crispy skin if they're skin-on. Put the chicken thighs in a big bowl.

2. Season and Marinate the Chicken Thighs: Season the chicken thighs with salt, garlic powder, black pepper, paprika, Italian seasoning, and extra virgin olive oil. Rub well to coat and marinate for 30 minutes.

3. Arrange the Chicken in the Baking Dish: Place the seasoned chicken thighs in a baking dish, spacing them apart for even cooking.

4. Bake and Broil for Crispy, Juicy Chicken: Bake at 400°F / 200°C (375°F convection / 190°C fan) for 30-35 minutes, then broil for 2-3 minutes for crispier skin. Take the chicken out of the oven and let it rest for 5 minutes to keep it juicy.

How Long to Bake Chicken Thighs

The exact cooking time depends on the size of the chicken thighs and your oven temperature. For this recipe, I bake them at 400°F / 200°C for 30-35 minutes, which gives the skin enough time to become crisp while keeping the meat juicy.

Tips for Perfect Baked Chicken Thighs

Bring the Chicken Closer to Room Temperature: I like taking the chicken out of the refrigerator about 20 minutes before cooking. It helps the thighs cook more evenly and promotes better browning. 

Use a Baking Rack if You Have One: When I want especially crispy skin, I place the chicken on a wire rack set over a baking sheet. The hot air circulates around the thighs and helps crisp every side. 

Rotate the Pan Halfway Through Baking: Some ovens have hot spots, so I like turning the pan halfway through cooking. It helps the chicken brown more evenly. 

Check the Largest Thigh First: Not all chicken thighs are exactly the same size. I always check the thickest piece first to make sure everything is fully cooked before removing the pan from the oven. 

Storage and Reheating

Store leftover baked chicken thighs in an airtight container in the refrigerator for up to 4 days. I usually reheat them in the oven or air fryer to help keep the skin crisp.

I love serving these baked chicken thighs with Greek lemon potatoes or crispy potato wedges to soak up the juices. A fresh tomato burrata salad adds a refreshing contrast, and a basket of warm garlic bread or crusty ciabatta is always welcome on the table.

Ingredients 
 

  • 6 bone-in skin-on chicken thighs
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning

Instructions

  • Pat 6 bone-in skin-on chicken thighs dry with paper towels and place them in a large bowl.
  • Add 2 tbsp extra virgin olive oil, 1 tsp salt, ½ tsp black pepper, 1 tsp garlic powder, 1 tsp paprika, and 1 tsp Italian seasoning. Rub the seasoning mixture all over the chicken until evenly coated. Marinate for 30 minutes.
  • Arrange the seasoned chicken thighs in a baking dish, leaving a little space between each piece.
  • Bake in an oven at 400°F / 200°C (375°F convection / 190°C fan) for 30-35 minutes, until the chicken is cooked through and the skin is golden.
  • For extra crispy skin, broil for 2-3 minutes at the end of cooking.
  • Let the chicken rest for 5 minutes before serving. 

Notes

Pat the Chicken Dry: Removing excess moisture helps the skin become crispier as it bakes. I always take a minute to pat the chicken dry before adding the seasoning.
Give the Chicken Space: I like to leave a little room between each thigh in the baking dish so the hot air can circulate properly and roast the chicken evenly.
Use the Broiler Carefully: For extra crispy skin, I often finish the chicken under the broiler for a couple of minutes, but it can brown quickly, so keep a close eye on it.
Rest Before Serving: Letting the chicken rest for a few minutes after baking helps keep the juices in the meat. I find the texture is much better when I don't skip this step.
Store Leftovers Properly: Leftover baked chicken thighs keep well in the refrigerator for up to 4 days in an airtight container. I usually reheat them in the oven or air fryer to help maintain the crispy skin.
