This easy recipe keeps things simple, which is exactly why I come back to it. I make the mixture once, let it infuse overnight, and then it's ready whenever I want a warm cup of tea. It's especially handy in colder months, but I also love it poured over ice when I want something lighter during the day. 

What I find most convenient is the make-ahead setup. Instead of starting from scratch every time, the lemon, honey and ginger sit together and turn into a concentrated base that keeps well in the fridge. When I'm ready, I just add hot water, give it a quick stir, and adjust it to taste, more mixture if I want it stronger, less if I want it mild.

4. Make the Tea: Add 2 tablespoons of the lemon honey ginger mix to a cup, pour in boiling water, and stir well.

  • Cinnamon version: Stir a pinch of cinnamon into the cup after you add hot water for a warmer finish. 
  • Turmeric version: Add a small pinch of ground turmeric for color and a deeper, earthy note.

My Tips for Recipe Success

Avoid a Bitter Edge: I like to remove any lemon seeds before the mixture goes into the jar; those little seeds can add bitterness as it sits.

Ingredients 

  • 1 lemon
  • 200 g ginger
  • 5-6 cloves garlic
  • 2 tablespoon lemon juice
  • 300 g honey
  • water

Instructions

  • Peel the lemon, cut it into thin slices, and put them on a plate.
  • Peel the ginger, and grate over the lemon slices.
  • Peel the garlic cloves, then use a garlic press to finely crush them over the lemon slices.
  • Pour lemon juice and add honey, stirring until well combined.
  • Place the lemon honey ginger mixture in a jar. Seal the jar and place it in the refrigerator for at least 24 hours.
  • In a small saucepan, boil water. Add 2 tablespoons of the lemon honey ginger mixture to a teacup. Pour in boiling water and stir until well mixed.

Notes

Sterilize Your Jar: I like to wash the jar really well and rinse it with boiling water before adding the mixture, as this helps it stay fresh longer. 
Infusion Time: Let the mixture rest in the fridge for at least 24 hours so the flavors can blend properly; I find it develops a richer taste with time. 
Serving Suggestions: Start with 2 tablespoons per cup of hot water, adjusting to taste as you go; I usually tweak it depending on how strong I want it. 
Water Temperature: Let boiling water cool slightly before pouring it in; I do this so the honey keeps its flavor and natural qualities. 
Straining (Optional): You can strain out the lemon, ginger, and garlic for a smoother drink, or leave them in for more intensity; I sometimes keep them in for a stronger finish.
