I turn to this dough when I'm craving pizza but don't feel like making a big mess in the kitchen. It's incredibly low-effort; no kneading, no mixer, no flour-dusted counters. I just stir it up in one bowl and let it sit while I go about my day. When I come back, it's ready to go.

This no-knead pizza dough always feels special, even with the simplest toppings. There's just something comforting about pulling a fresh, hot pizza out of your own oven on a cozy pizza night.

  • Flour 00, Yeast, and Warm Water: I use 00 flour because it makes the dough super soft and light. The yeast activates quickly with warm water and a touch of sugar. 
  • Salt and Olive Oil: Salt gives the dough flavor, and I stir in the extra virgin olive oil at the end to make it smooth and easy to handle. 
  • Topping: I mix passata with extra virgin olive oil, salt, white pepper, and oregano. It's fresh, simple, and keeps the crust from getting soggy. Grated mozzarella melts beautifully, and I always add basil at the end so it stays fresh and fragrant. 

👩🏻‍🍳How to Make No-Knead Pizza Dough

You can find the complete printable recipe with measurements below, but for now, here's a quick overview of how it goes:

1. In a big bowl, mix flour, yeast, sugar, salt, and warm water until it becomes dough.

2. Add olive oil and mix until smooth. Cover with cling film and let it rise in a warm spot for 2 hours or until it doubles.

3. Once risen, spread the dough evenly on a baking sheet and top with a thin layer of tomato sauce. Bake in the air fryer at 428°F (220°C) for 15 minutes until golden.

4. Sprinkle mozzarella and oregano, bake again for 5 minutes until bubbly and golden, then add fresh basil, slice, and enjoy while hot.

💭My Tips for Recipe Success

Stretch Gently, Don't Roll: I shape the dough right on the parchment using a spatula, no rolling pin, just a light touch. 

Storage: I keep any leftover dough in the fridge for up to 4 days, making sure it's well covered with cling film to keep it fresh and soft.

Ingredients 

No Knead Pizza Dough:

  • 250 g Flour 00
  • 8 g Instant Yeast
  • 1 teaspoon Sugar
  • 1 teaspoon Salt
  • 250 g Warn Water
  • 1 tablespoon Extra Virgin Olive Oil

Pizza Topping:

  • 100 g Passata
  • ⅛ teaspoon Salt
  • ⅛ teaspoon White Pepper
  • ½ teaspoon Oregano
  • 1 tablespoon Extra Virgin Olive Oil
  • 100 g Grated Mozzarella
  • 1 tablespoon Oregano
  • 8 Basil Leaves

Instructions

  • In a large mixing bowl, combine the flour, yeast, sugar, salt, and warm water. Mix with a spatula until a dough forms.
  • Add the extra virgin olive oil and stir until smooth and well combined.
  • Cover the bowl with cling film and let it rise in a warm place for 2 hours, or until doubled in size.
  • Once risen, transfer the dough onto a parchment-lined baking sheet and spread it out evenly.
  • In a separate bowl, mix the passata with salt, white pepper, oregano, and extra virgin olive oil.
  • Spread a thin layer of the tomato sauce evenly over the dough.
  • Bake in a preheated air fryer at 430°F ( 220°C) for 15 minutes or until the crust is golden.
  • Remove from the air fryer and sprinkle the grated mozzarella and extra oregano evenly over the top.
  • Return to the air fryer and bake @ 430°F ( 220°C) for 5 more minutes, or until the cheese is melted and slightly browned.
  • Top with fresh basil, slice, and serve hot.

Notes

Mix the Dough Thoroughly: I like to stir until the dough is nice and smooth; just enough so everything comes together without kneading.
Give It Time to Rise: I always let it sit the full 2 hours so the dough gets light and fluffy; it’s worth the wait.
