My friend’s Rahm Noodles recipe is a family favorite in their German household. For such a rich and creamy dish, it’s surprisingly simple and uses just a few ingredients, but it’s incredibly filling! These noodles are buttery and coated in a creamy sauce that’s just the right level of indulgence. Every time I make them, they satisfy that craving for something warm and comforting. Honestly, I would probably eat them all the time if they weren’t so rich! My friend saves this dish for special occasions when we’re really in the mood for something extra comforting.

Rahm Noodles Recipe
My German friend's family moved to Scotland years ago, and they now live in a picturesque Scottish countryside with her grandmother. One chilly day, I visited them, and her grandmother treated us to a comforting dish of Rahm Noodles, perfect for the cold weather. The creamy, rich noodles were delicious, and I couldn’t help but ask for the recipe.
Now, whenever I crave something warm and satisfying, I make these noodles myself. My friend told me they only had them occasionally, but whenever they did, her family was always excited. Not just because of how tasty they were, but because they were hearty, filling, and incredibly comforting.
This dish holds a special place in their family. Her grandmother, who loves it, learned to make Rahm Noodles from her mother when she was just 10 years old. It’s a recipe passed down through generations, deeply rooted in German tradition.
I feel fortunate to have learned it as well. Whenever my friend’s family found out that I was making Rahm Noodles, they were overjoyed to know I loved the dish as much as they did. Now, it's become a favorite of mine, too, a dish that connects me to both their heritage and the warmth of home.

🧾Rahm Noodles Ingredients
Here’s what you need to make this Rahm Noodles:

For the Noodles:
- All-Purpose Flour: This is my go-to for these noodles, providing the base that gives them their structure and slight chew when kneaded.
- Salt: Just a bit of salt goes a long way in boosting the noodles' flavor and helps give the dough a better texture when kneading.
- Vegetable Oil: A little oil adds richness to the dough, keeping it soft and preventing it from drying out.
- Water: Room-temperature water brings the dough together, making it pliable and easy to roll.
- Butter for Layering: Unsalted butter adds that classic buttery taste and keeps the noodles tender with a touch of golden crisp when cooked.
For Frying and Sauce:
- Butter: I use more butter for frying, which gives the noodles a rich, nutty flavor and a golden finish.
- Water: Just a splash for cooking the noodles.
- Cream: Heavy cream makes the sauce velvety and smooth, wrapping each noodle in a luxurious, mildly sweet flavor.

These step-by-step instructions and photos will help you to visualize how to make this recipe. See the recipe card for a printable version of this recipe.

1. In a large bowl, mix the flour and salt. Make a small well in the center, add vegetable oil, then slowly pour in water, stirring as you mix.
2. Knead the dough for 10 minutes until smooth and stretchy. Cover the dough with a cloth and let it rest for 10 minutes.
3. After the dough rests, roll it into a thin sheet (3-4 mm thick). Spread 3 tablespoon of softened butter on top, then roll it up and slice into 1-inch pieces.
4. Melt 100 g of butter in a large saucepan over low-medium heat. After the butter melts, add 60 ml of water and stir.

5. Add the noodles to the pan, cover, and cook for 10 minutes until golden and crispy on one side. Flip and cook for another 4 minutes until browned.
6. Add the cream and simmer for about 10 minutes until it thickens. Serve right away.

💭Tips for Recipe Success
Measure Carefully: Use the right amounts of flour and water to get a soft dough but not sticky. You can adjust slightly if needed.
Knead Well: Give the dough a good 10-minute knead to make it stretchy, so the noodles hold their shape.
Cut Evenly: Use a sharp knife for consistent noodles that cook evenly and look great.
Moderate Heat: Fry the noodles on medium-low in butter until golden and just crispy on the outside.
Simmer the Sauce: When adding cream, keep the heat low to avoid curdling and let the sauce thicken nicely.
Serve Right Away: Rahm Noodles are best hot and creamy. If the sauce thickens, a quick splash of water or cream will bring it back to life.
