I grew up eating fish prepared simply, and this baked cod brings back that same clean, comforting feeling, but with a buttery garlic twist I love. It's quick, no-fuss, and always tastes like more effort than it is.

There was a small coastal market near my grandfather's house that sold fresh fish early in the mornings, and we'd walk there with a basket in hand. He'd always pick cod or hake, never the flashier catch, because he said the good ones didn't need much. This dish reminds me of those quiet afternoons: no fancy prep, just fish, a bit of garlic, and lemon from the tree outside the kitchen.
Now, when I make it, I do it my own way, with softened butter and paprika, and a warm oven instead of a stovetop. It's not exactly the same, but the smell is familiar. And somehow, it still feels like home, even in a different kitchen.

⭐Why You'll Love This Baked Cod
- Comes Together in Under 15 Minutes: Perfect for busy nights when you want real food fast.
- No Complicated Prep: You just season, mix the butter, and bake, easy cleanup, too.
🧾Baked Cod Ingredients
You'll find the exact measurements in the recipe card, but here's a closer look at a few of the ingredients and why I use them.

- Cod Fillet: I always reach for thick, fresh fillets; they stay juicy in the oven and hold their shape beautifully while soaking up all the flavor from the butter.
- Lemon & Seasoning: I like using a whole lemon cut into wedges under the fish to keep it moist while it bakes, and a simple mix of salt, pepper, and paprika gives just the right balance of warmth and brightness.
- Garlic Butter: For the topping, I mix soft butter with extra virgin olive oil, garlic, lemon zest and juice, paprika, and fresh parsley; it melts into the cod and turns into the most flavorful finish.
- Fresh Parsley: I always save a little to sprinkle on top right before serving; it adds a fresh pop of color and rounds out the flavor perfectly.
👩🏻🍳How to Make Baked Cod
You can find the complete printable Baked Cod recipe with measurements below, but for now, here's a quick overview of how it goes:

1. Slice the cod fillet and sprinkle with salt, pepper, and paprika.
2. In a small bowl, combine butter, extra virgin olive oil, lemon zest, lemon juice, garlic, parsley, and paprika.
3. Cut the lemon into four pieces, place them in the baking dish, and sit the cod over the lemon. Top each seasoned cod fillet with a tablespoon of garlic butter.
4. Bake in a preheated oven at 200°C (400°F) for 10 minutes. Cooking time may vary with the fillet thickness.

📖Variations
- Mediterranean Style: Toss in cherry tomatoes, olives, capers, and a drizzle of olive oil for a flavorful, savory twist.
- Spicy Cajun Cod: Use Cajun or blackened seasoning for a smoky, spicy kick.
🍽 What to Serve with Baked Cod
This Baked Cod is super easy and so juicy! The buttery lemon sauce is key, so don't forget to spoon it over the fish.
I usually serve this baked cod with a tomato burrata salad or simple cucumber salad, and roasted potatoes or rice if I want something heartier. A warm piece of crusty ciabatta or garlic bread on the side is perfect for soaking up that garlic butter. For dessert, something like lemon mousse works beautifully to finish the meal on a light note.

💭Tips for Recipe Success
Mince the Garlic Finely: I always chop it by hand instead of using a press, so it blends evenly into the butter without clumping or burning.
Dry the Cod Well before Seasoning: I pat the fillets dry with paper towels first; it helps the seasoning stick better and keeps the texture clean.
Store Leftovers Lined with Paper Towel: I place any extra cod in a container with a paper towel underneath to keep moisture from making it soggy. It reheats best with a little lemon juice.
