I grew up eating fish prepared simply, and this baked cod brings back that same clean, comforting feeling, but with a buttery garlic twist I love. It's quick, no-fuss, and always tastes like more effort than it is.

There was a small coastal market near my grandfather's house that sold fresh fish early in the mornings, and we'd walk there with a basket in hand. He'd always pick cod or hake, never the flashier catch, because he said the good ones didn't need much. This dish reminds me of those quiet afternoons: no fancy prep, just fish, a bit of garlic, and lemon from the tree outside the kitchen. 

Now, when I make it, I do it my own way, with softened butter and paprika, and a warm oven instead of a stovetop. It's not exactly the same, but the smell is familiar. And somehow, it still feels like home, even in a different kitchen.

1. Slice the cod fillet and sprinkle with salt, pepper, and paprika.

2. In a small bowl, combine butter, extra virgin olive oil, lemon zest, lemon juice, garlic, parsley, and paprika.

3. Cut the lemon into four pieces, place them in the baking dish, and sit the cod over the lemon. Top each seasoned cod fillet with a tablespoon of garlic butter.

4. Bake in a preheated oven at 200°C (400°F) for 10 minutes. Cooking time may vary with the fillet thickness.

This easy baked cod is my go-to when I want something fast but flavorful. The garlic butter melts into the fish, and that squeeze of lemon just brightens everything up.

Ingredients 

  • 500 g Cod Fillet
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper
  • ¼ teaspoon Paprika
  • 1 Lemon

For Garlic Butter:

  • 60 g Butter
  • 1 tablespoon Extra Virgin Olive Oil
  • ½ tablespoon Lemon Zest
  • 1 tablespoon Lemon Juice
  • 2 Cloves Garlic - Minced
  • 2 tablespoon Fresh Parsley - Chopped
  • ½ teaspoon Paprika

Instructions

  • Preheat the oven to 400°F (200°C) with a fan.
  • Cut the cod fillet into portions and season evenly with salt, black pepper, and paprika.
  • Cut the lemon into quarters and place the pieces in a baking dish.
  • Arrange the cod portions on top of the lemon pieces in the dish.
  • In a small bowl, mix the butter, extra virgin olive oil, lemon zest, lemon juice, minced garlic, parsley, and paprika until well combined.
  • Spoon about one tablespoon of the garlic butter mixture over each piece of cod.
  • Bake for 10 minutes, or until the cod is opaque and flakes easily with a fork.
  • Garnish with fresh parsley and serve warm with a salad.

Notes

Bake Just Until Flaky: I always check the cod at the 10-minute mark; if it flakes easily with a fork, it's ready. Overbaking can dry it out quickly.
Layer Over Lemon: I like placing the cod right on top of lemon wedges; it lifts the fish off the pan and adds a fresh citrusy flavor as it bakes.
Mix the Butter Well: I make sure the garlic butter is well blended so every spoonful has a bit of garlic, parsley, and zest.
Spoon Generously: I use a full tablespoon of the garlic butter on each fillet to get that rich, herby flavor in every bite.
Finish with Fresh Parsley: A little sprinkle of parsley right before serving makes the dish look fresh and adds a nice pop of color.
