Easy Oven Baked Trout Recipe for a Flavorful Weeknight Dinner 

Baking whole trout in the oven reminds me of how my mother used to cook cod and salmon when I was younger. She always believed the best way was to keep it whole, letting the skin protect the flesh so it stayed moist and flavorful. Watching her, I learned that something that looked so impressive was actually very simple to make.  

When I started doing it myself, I realized she was right; there's nothing difficult about an oven baked trout recipe. The trout goes in the oven, the kitchen fills with that familiar smell, and before long, it's ready to serve. It's the kind of dish that feels effortless, and you can have it on the table in about 35 minutes.

🧾Oven Baked Trout Ingredients

  • Potatoes, Onion, and Red Pepper: I like using these together because they soften into a sweet, savory base that makes the fish taste even better. It's simple, but it feels complete. 
  • Trout Fish: Whole trout is my go-to here because it cooks quickly, stays moist, and looks beautiful right out of the oven. 
  • White Wine and Seasonings: A splash of wine gives depth, while just salt and black pepper keep the flavor clean and balanced. 
  • Garlic Sauce: This is my secret sauce, it is a mix of extra virgin olive oil, garlic, parsley, and vinegar is my favorite finishing touch, sharp, fresh, and the kind of sauce I drizzle over everything on the plate.

1. Prep the Oven and Vegetables: Preheat the oven to 200°C (392°F) or 180°C (350°F) fan. Slice potatoes, onion, and red pepper, then spread in a baking dish.

2. Bake the Vegetables: Drizzle with extra virgin olive oil, season, and bake for 15 minutes. Stir, add white wine, and return to the oven for 7 minutes.

3. Add the Trout: Place trout on top, season, and bake for 12 minutes, until the fish is cooked through and the vegetables are tender.

4. Make the Garlic Sauce & Serve: Quickly sauté garlic and parsley in extra virgin olive oil, remove from heat, add vinegar, then drizzle over oven baked trout and vegetables.

🍽 What to Serve with Baked Trout

This dish is perfect with a side of crusty ciabatta or garlic bread to soak up the sauce. I also like adding a simple tomato salad to keep it fresh, and for dessert, a smooth banana flan makes the meal feel complete.

Check the Fish Early: I start checking the trout at 10 minutes, so it stays moist and doesn't overcook. 

Keep the Garlic Gentle: I cook the garlic just until fragrant, not browned, so the sauce keeps its fresh taste. 

Storage Tip: Oven baked trout leftovers keep well for 2 days in the fridge. I reheat them in the oven so the fish doesn't dry out.

Oven Baked Trout

This oven baked trout comes out tender, flaky, and full of fresh flavor. Baked over simple vegetables with a light garlic sauce, it's an easy, 35-minute dinner that still feels special enough to serve any night of the week.

Ingredients 

  • 3 Potatoes - Sliced
  • 1 Onion - Sliced
  • 1 Red Bell Pepper - Sliced
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper - Freshly ground
  • 50 ml Extra Virgin Olive Oil
  • 100 ml White Wine
  • 2 Trout Fish
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper - Freshly ground

For Garlic Sauce: 

  • 50 ml Extra Virgin Olive Oil
  • 3 Cloves Garlic - Minced
  • Parsley - Chopped
  • 60 ml Vinegar

Instructions

  • Preheat the oven to 392°F (200°C) or 350°F (180°C) for fan-forced.
  • Peel the potatoes and onion, then slice them along with the red pepper. Spread the vegetables evenly in a baking dish. Drizzle the vegetables with extra virgin olive oil, season with salt and black pepper, and bake for 15 minutes. Remove the tray from the oven, stir the vegetables gently, pour in the white wine, and return to the oven for 7 minutes.
  • Place the trout on top of the vegetables, season with salt and black pepper, and bake for 12 minutes, until the fish is cooked through and the vegetables are soft.
  • For the garlic sauce, heat the extra virgin olive oil in a small pan over medium heat. Add the minced garlic and parsley, and cook for 1 minute until fragrant. Turn off the heat, pour in the white wine vinegar, and swirl the pan in an encircling motion to emulsify the sauce.
  • Serve the baked trout with the roasted vegetables and drizzle with the garlic sauce.

Notes

Vegetables First: I like to give the vegetables a head start in the oven for 15 minutes so they soften nicely before the trout goes on top.
Fresh Garlic Flavor: I always add the garlic sauce at the very end, so it stays bright and doesn’t lose its punch.
Crispier Finish: I sometimes switch on the broiler for the last 2 minutes because it gives the trout skin a light, crisp edge.
Wine Swap: If I’m out of white wine, I just use a splash of chicken broth; it still brings great flavor to the dish.
