Baked Whole Tilapia Recipe

Baked whole tilapia roasts over potatoes and onion with dry sherry, lemon, garlic, and bay leaves until the flesh turns opaque and flakes easily. The two-stage method gives the potatoes time to turn golden without keeping the fish in the oven for the entire cooking time.

Of all the whole tilapia recipes I make, this is the one I return to when I want a comforting fish dinner without complicated preparation. Keeping the fish whole gives the meal a generous presentation, but the preparation is simply a matter of scoring, seasoning, and stuffing it. I use a similar whole-fish approach for my oven-baked trout, although the dry sherry gives this tilapia its own character. When I want the contrast of crisp skin from a skillet instead, I prepare my pan-fried red snapper.

What I enjoy most is the contrast between the mild, flaky tilapia and the potatoes underneath, which absorb the dry sherry, extra-virgin olive oil, and cooking juices. Baking the potatoes first is important because they need more time than the fish, while placing the tilapia over them allows both parts of the meal to finish together. The restrained seasoning keeps the fish at the center, much as it does in my baked salmon in foil and easy baked cod, while the sherry-roasted vegetables make this a complete dinner.

How Long to Bake Whole Tilapia at 400°F

In this recipe, the potatoes and onion bake at 400°F for 40 minutes before the whole tilapia is added. The fish then bakes for approximately 30 minutes. Because whole tilapia vary in size, check that the flesh is opaque and separates easily with a fork instead of relying only on the cooking time.

  • Dry Sherry: I use dry sherry to give the potatoes and onion depth without introducing the sweetness of a sweeter sherry.
  • Extra-Virgin Olive Oil and Seasoning: My simple combination of olive oil, salt, and freshly ground black pepper keeps the tilapia moist while allowing its mild flavor to remain noticeable.

How to Make Baked Whole Tilapia

1. Prepare the Tilapia: Make deep diagonal cuts on both sides of the cleaned fish. Season inside the cuts, fill the cavity with lemon, garlic, and bay leaves, then refrigerate it while preparing the potatoes.

2. Start the Potatoes: Toss the diced potatoes and sliced onion with the seasonings, extra-virgin olive oil, and dry sherry. Bake at 400°F / 200°C for 40 minutes.

3. Add the Whole Fish: Place the seasoned tilapia over the partially baked potatoes and onion. Pour the remaining dry sherry and extra-virgin olive oil over the fish.

4. Finish Baking and Serve: Bake for another 30 minutes, until the tilapia is opaque and flakes easily while the potatoes are golden and tender. Serve the fish with the sherry-roasted potatoes and onion.

Tips for Juicy Whole Tilapia

Buy the Fish Prepared: I use a tilapia that has already been scaled, gutted, and cleaned, which makes preparing the recipe much more straightforward.

Season Inside the Cuts: Work the salt and pepper into the diagonal cuts instead of seasoning only the surface so the thicker areas receive seasoning too.

Secure the Aromatics: I tuck the lemon, garlic, and bay leaves firmly inside the cavity so they remain with the fish as it is moved into the baking dish.

Allow a Short Rest: Letting the tilapia rest for 5-10 minutes after baking makes it easier to portion and serve with the potatoes.

  

Storage

Leftover baked tilapia, potatoes, and onion keep in an airtight container in the refrigerator for 2-3 days. For better texture, I reheat them in the oven until warmed through, although the microwave works well for a quicker option. I prefer not to freeze this dish.

The potatoes and onion already make this a complete dinner, so I usually add something simple alongside it. Warm ciabatta or garlic bread works well for soaking up the sherry-flavored juices, while marinated tomatoes provide a fresh contrast to the roasted fish and vegetables.

Ingredients 
 

For the Whole Tilapia

  • 1 whole tilapia - scaled, gutted, and cleaned
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 4 lemon slices
  • 4 cloves garlic
  • 2 bay leaves

For the Potatoes and Onion

  • 250 g potatoes - diced
  • 1 onion - sliced
  • 1 teaspoon salt
  • ¼  teaspoon freshly ground black pepper
  • 2 tablespoons extra virgin olive oil
  • 80 ml dry sherry

For Baking the Tilapia

  • 40 ml dry sherry
  • 2 tablespoons extra virgin olive oil

Instructions

  • Preheat the oven to 400°F / 200°C.
  • Make 3-4 deep diagonal cuts on both sides of the cleaned whole tilapia. Rub the fish with 1 teaspoon salt and ½ teaspoon freshly ground black pepper, working the seasoning into the cuts.
  • Place 4 lemon slices, 4 cloves garlic , and 2 bay leaves inside the fish cavity. Refrigerate the stuffed tilapia while the potatoes begin baking.
  • Add 250 g potatoes, diced, and 1 onion, sliced, to a large, shallow baking dish. Season with 1 teaspoon salt and ¼  teaspoon freshly ground black pepper. Add 2 tablespoons extra virgin olive oil and 80 ml dry sherry, then toss until evenly coated.
  • Bake the potatoes and onion for 40 minutes.
  • Place the seasoned tilapia over the potatoes and onion. Pour 40 ml dry sherry and 2 tablespoons extra virgin olive oil over the fish.
  • Return the dish to the oven and bake for 30 minutes. The fish is ready when its flesh is opaque and separates easily with a fork, while the potatoes should be golden and tender.
  • Serve the baked whole tilapia immediately with the sherry-roasted potatoes and onion. 

Notes

Use Doneness Cues: Whole tilapia vary in size, so I check that the flesh is opaque and flakes easily instead of relying only on the 30-minute cooking time.  
Give the Potatoes a Head Start: I bake the potatoes and onion first so they can soften and turn golden without requiring the fish to remain in the oven longer.  
Choose a Shallow Dish: A large, shallow baking dish gives the potatoes more room and helps them roast instead of becoming crowded and steaming.  
Watch the Sherry Mixture: If the liquid evaporates before the potatoes are tender, I add a small splash of warm water or broth to keep them moist.
