1. Make the Garlic Butter: In a bowl, soften the butter with a fork, then add minced garlic, chopped parsley, white pepper, and grated Parmesan.

2. Combine Until Smooth: Mix until smooth and well combined.

3. Spread on Sourdough: Spread the garlic butter evenly over each slice of sourdough bread.

4. Bake Until Golden: Bake in a preheated oven at 400°F / 200°C (350°F convection / 180°C fan) for 7-8 minutes until golden and crisp, then let cool slightly before serving.

Use Room Temperature Butter: I find softened butter mixes much more evenly with the garlic, parsley, and Parmesan, making it easier to spread across the bread.

Choose a Good Quality Sourdough: A sturdy loaf gives the best contrast between the crisp crust and the soft center. Thin sandwich bread won't give the same texture. 

Storage

I store leftover garlic sourdough toast in an airtight container in the refrigerator for up to 2 days and reheat it in the oven until crisp again.

Ingredients 
 

  • 115 g salted butter - softened
  • 4 cloves garlic - minced
  • 15 g fresh parsley - finely chopped
  • ¼ teaspoon white pepper
  • 45 g grated Parmesan cheese
  • 5 slices sourdough bread

Instructions

  • Preheat the oven to 400°F / 200°C (350°F convection / 180°C fan).
  • In a mixing bowl, combine the ½ cup (115 g) softened salted butter, 4 minced garlic cloves, ¼ cup (15 g) chopped parsley, ¼ teaspoon white pepper, and ½ cup (45 g) grated Parmesan cheese. Stir until smooth and well combined.
  • Spread the garlic butter evenly over each slice of sourdough bread. Place the sourdough slices on a baking sheet, buttered side up.
  • Bake for 7-8 minutes, or until the edges are golden and crisp. Broil for 1-2 minutes at the end for an extra crispy top, if desired.
  • Let cool slightly, then serve warm or cold.

Notes

Use Softened Butter: I like letting the butter sit at room temperature first because it mixes much more easily with the garlic, parsley, and Parmesan. 
Freshly Grated Parmesan Works Best: I find freshly grated Parmesan melts into the butter mixture better and gives the toast a richer flavor. 
Keep an Eye on the Oven: Sourdough can brown quickly, so I start checking during the last minute or two of baking. 
Reheat in the Oven: I store leftovers in the refrigerator for up to 2 days and warm them in the oven for a few minutes to bring back the crisp texture.
