Toasted bread was always a staple growing up, simple, warm, and familiar. Coconut Toast came later and completely changed the game, reminding me of those bakery coconut buns but much easier to make at home.

When I want something sweet without baking a full dessert, I reach for this coconut toast recipe. It's quick, cozy, and always perfect with morning coffee or as an afternoon snack. The crisp edges, golden toast, and creamy coconut toast spread make it taste like a little treat every time.

What I love most about this coconut toast recipe is how simple it is. Butter, sugar, and shredded coconut bake into the bread. Regular sliced bread works beautifully, but brioche makes it extra rich. No mixer, just a spoon and oven time, and you've got one of those coconut toast recipes that always turns out right.

  • Butter & Sugar: I like starting with softened butter because it blends so easily and melts right into the bread as it bakes. A little white sugar is all it takes to sweeten the topping and give it that golden finish.
  • Coconut: Unsweetened flaked coconut is my go-to. It toasts beautifully, adds a light crunch, and gives every bite that warm, coconut flavor I can never get enough of.
  • Egg & Vanilla: One egg ties everything together, keeping the topping creamy and soft, while a splash of vanilla makes the whole kitchen smell like a bakery.
  • Bread: Most days I use simple sandwich bread, but when I want it to feel a bit more special, I reach for brioche. Both crisp up at the edges and soak in all that buttery flavor.

PROCESS 1-4

1. In a large bowl, mix the softened butter, sugar, and coconut flakes until well blended.

2. Stir the egg and vanilla into the butter mixture until smooth and creamy.

3. Place the bread slices on a baking sheet and generously spread the coconut mixture evenly over each slice of white bread.

4. Bake in a 350°F (175°C) oven with a fan for 15-20 minutes, until the topping is golden. Let the coconut toast cool a bit before serving.

💭Tips for Recipe Success

Toast One Side First (Optional): Sometimes I lightly toast just one side of the bread before adding the coconut topping; it helps the base stay crisp and not soggy underneath. 

Let It Rest a Minute: I wait a minute or two after baking before cutting into it. The topping sets slightly, and the toast is easier to handle. 

Store Leftovers in a Single Layer: If I have leftovers (rarely!), I store them in a single layer in an airtight container so the topping doesn't get squished or soggy.

Ingredients 

  • 100 g Butter
  • 100 g Sugar
  • 100 g Flaked Coconut
  • 1 Egg
  • 1 teaspoon Vanilla
  • 8 slices White Bread

Instructions

  • Preheat the oven to 350°F(175°C) with the fan on.
  • Arrange the slices of white bread in a single layer on a baking sheet.
  • In a large bowl, mix the softened butter, sugar, and flaked coconut until well combined.
  • Add the egg and vanilla extract, then mix until the mixture is smooth and creamy.
  • Spread the coconut mixture evenly over each slice of bread.
  • Bake for 15-20 minutes, or until the topping is golden and the edges are crisp.
  • Let the coconut toast cool slightly before serving warm.

Notes

Soften the Butter First: I like to leave the butter out for about 30 minutes; it makes mixing everything so much easier and smoother.
Mix Until Creamy: I stir the coconut mixture really well until it looks thick and creamy, so it spreads evenly over the bread.
Spread Generously: I don’t hold back on the topping; I make sure every corner of the bread is covered for that perfect golden bite.
Watch for Golden Edges: I keep an eye on the oven and take them out when the edges are just turning golden. That’s when they’re perfect.
Serve While Warm: I love serving these right out of the oven when the topping is still a little crispy on top and soft underneath.
