Unlike some recipes that call for heavy cream or cream cheese, this chocolate frosting is made with cocoa powder, cornstarch, and butter. The result is a silky, glossy frosting that's easy to spread and absolutely delicious. It's the chocolate frosting I turn to again and again for every cake, cupcake, or cookie.

1. Whisk sugar, cornstarch, cocoa powder, and salt in a small saucepan, then slowly add water while whisking until smooth.

2. Stir in vanilla and cook over medium heat, whisking constantly, until the mixture thickens and bubbles (about 12-15 minutes).

3. Remove from heat and stir in butter until melted, smooth, and glossy.

💭My Tips for Recipe Success

Cook on Medium Heat: I stick to medium heat and keep stirring the whole time. It thickens evenly this way and doesn't risk burning at the bottom.

Make It Ahead: Sometimes I make this frosting a day or two in advance. It keeps well in the fridge, just let it warm up a bit and give it a stir before using.

Storage: I like to store leftovers in an airtight container in the fridge for up to a week. Before using again, I always bring it back to room temp.

Chocolate Frosting With Cocoa Powder

This chocolate frosting with cocoa powder is smooth, rich, and easy to spread. With deep cocoa flavor and a creamy texture, it makes cakes and cupcakes extra special.

Ingredients 

  • 200 g Granulated Sugar
  • 55 g Cornstarch
  • 22 g Unsweetened Cocoa Powder
  • ¼ teaspoon Salt
  • 1 teaspoon Vanilla Extract
  • 225 g Water - Room temperature
  • 25 g Unsalted Butter - Room temperature

Instructions

  • In a small saucepan, whisk together the granulated sugar, cornstarch, cocoa powder, and salt until well combined.
  • Gradually pour in the water while whisking to avoid lumps. Continue whisking until the mixture is smooth.
  • Add the vanilla extra and whisk until well combined.
  • Place the saucepan over medium heat, stirring constantly until the mixture thickens and starts to bubble. This will take around 12-15 minutes. The mixture should become smooth and thick, like a pudding.
  • Once the mixture has thickened, remove it from the heat.
  • Stir in the unsalted butter until the butter is completely melted and the frosting is smooth and glossy.
  • Place the chocolate frosting with cocoa powder in a bowl, and let it cool down to room temperature. Once cooled, the frosting will thicken further.
  • Once the frosting is completely cooled and thickened, you can spread it on cakes, cupcakes, or any dessert of your choice.

Notes

Whisk Continuously: I like to keep whisking the whole time as the dry ingredients mix with the water. It keeps the frosting smooth and creamy, and I always make sure to scrape the corners of the pan so nothing sticks.
Cool Gradually: I let the frosting cool on the counter and give it a stir now and then so it doesn’t form a skin on top.
Adjust Thickness: If it feels a little too thick once cooled, I just add a teaspoon of warm water at a time until it loosens up to the right texture.
Chill Before Use: When the frosting is softer than I’d like, I pop it in the fridge for 10–15 minutes. I just keep an eye on it so it doesn’t firm up too much.
