I made this peanut butter mousse one evening when I didn't feel like baking but still wanted a treat. It's been a favorite ever since, light, creamy, and so easy to make.

  • Heavy Cream: Whipping the cream separately makes the texture light and airy; this step turns the base into an actual mousse, and I never skip it.

1. In a large bowl, beat together the cream cheese, peanut butter, powdered sugar, vanilla, and salt until smooth.

2. In another bowl, use a hand mixer to whip the heavy cream until stiff peaks form, about 3-4 minutes on medium-high speed.

3. Gently fold the whipped cream into the peanut butter mixture, a little at a time. Be careful not to overmix, to keep the mousse light and fluffy.

4. After the mousse is mixed, spoon it into a piping bag with a tip. Pipe into serving glasses and chill in the fridge for at least 4 hours to set. Remove the peanut butter mousse from the fridge 20 minutes before serving.

Let the Cream Cheese Sit Out First: Cold cream cheese doesn't blend well and can leave lumps. I always set it out 30 minutes ahead so it mixes smoothly with the peanut butter. 

Chill the Mixing Bowl for the Cream: On warm days, I chill my mixing bowl and beaters in the fridge; it helps the cream whip faster and hold soft peaks perfectly. 

Store Leftovers Properly: If you have any leftovers, cover the serving glasses with plastic wrap and keep them in the fridge for up to 3 days. The texture stays fluffy and smooth.

  • 100 g Cream Cheese
  • 60 g Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • ¼ teaspoon Salt
  • 300 ml Heavy Cream
  • 150 g Creamy Peanut Butter

Instructions

  • In a large bowl, beat the cream cheese, peanut butter, powdered sugar, vanilla extract, and salt until smooth and well combined.
  • In a separate bowl, whip the heavy cream with a hand mixer on medium-high speed until soft peaks form, about 3-4 minutes.
  • Fold the whipped cream into the peanut butter mixture a little at a time, mixing gently to keep the texture light and fluffy.
  • Transfer the mousse into a piping bag fitted with a tip and pipe into serving glasses.
  • Refrigerate for at least 4 hours to chill and set.
  • Remove from the fridge and let rest for 20 minutes before serving.
