  • 4 Boneless Pork Loin Chops
  • 1 teaspoon Salt - Divided
  • ½ teaspoon Black Pepper - Freshly ground, divided
  • 2 Large Eggs - Lightly beaten
  • 2 Cloves Garlic - Finely minced or grated
  • 2 tablespoon Fresh Parsley - Finely chopped
  • 1 teaspoon Dried Italian Seasoning - Optional
  • 100 g Breadcrumbs or Panko - Homemade or store-bought
  • 35 g Parmesan Cheese - Finely Grated

  • On a large plate, mix together the breadcrumbs, minced garlic, chopped parsley, Italian seasoning, grated cheese, ½ teaspoon of salt, and ¼ teaspoon of black pepper.
  • In a shallow bowl, whisk the eggs until smooth.
  • Dip each pork chop into the eggs, then coat fully in the breadcrumb mixture, pressing lightly so it adheres.
  • Heat extra virgin olive oil in a skillet over medium heat.
  • Fry the cutlets for 3-4 minutes per side until golden and crisp and the internal temperature is 145°F (63°C).
  • Transfer to a paper towel-lined plate and serve with lemon wedges.

Press the Coating Firmly: I like to gently press the breadcrumbs into the pork so the crust stays crisp and doesn't fall off in the pan.
