These oven-baked pork steaks are tender, juicy, and full of rich flavor. Each boneless steak is coated in a savory spice mix, then baked until perfectly golden with a caramelized edge and succulent center.

Why You'll Love This Recipe

  • Quick & Easy: It comes together with only a handful of pantry ingredients and very little effort. I appreciate recipes like this because they deliver deep flavor without asking for complicated prep or long cooking time. It's satisfying, practical, and easy to repeat on busy days.
  • Foolproof: The method is reliable and balanced, which means the pork stays juicy every time. You don't have to guess or worry; the oven does the work, and the steaks come out tender instead of dry.

Oven Baked Pork Steak in 30 Minutes (Tender and Juicy)

When I first made it, I wanted something easy but satisfying, no frying, no complicated steps. Just seasoned pork that bakes beautifully in the oven with olive oil until the edges turn lightly crisp. Letting it marinate for a short time really makes a difference; the spices soak in, and the meat stays moist all the way through. It's the kind of recipe you can prepare quickly, much like my air fryer pork chop, then let the oven do the work while you set the table.

For this oven-baked pork steak recipe, I like to use a homemade pork rub, but a good store-bought blend works just as well. The flavors stay bold and balanced, and the pork steaks stay tender and juicy even after resting. It's the kind of baked pork steak dinner that feels comforting and home-cooked, but with zero stress in the kitchen. If you enjoy simple oven recipes like this one, my cast-iron chicken breast and baked chicken in chicken broth have that same easy, reliable feel.

Key Ingredients for Oven-Baked Pork Steak

You'll find the exact measurements in the recipe card, but here's a closer look at a few of the ingredients and why I use them.

  • Pork Steaks: I like using boneless pork steaks because they cook evenly and stay juicy in the center. They develop that light golden crust while keeping the inside perfectly tender.
  • Pork Seasoning: I usually use my homemade blend with paprika, garlic powder, and a hint of brown sugar. It gives the pork a deep, savory flavor and that warm color after baking.
  • Salt: A little salt ties everything together, bringing out the seasoning's flavor and the pork's natural richness.
  • Extra Virgin Olive Oil: I always drizzle olive oil to help the spices stick and to keep the pork moist as it bakes. It adds a smooth finish and subtle flavor.

How to Make Baked Pork Steak

You can find the complete printable recipe with measurements below, but for now, here's a quick overview of how it goes:

How to Make Baked Pork Steak

1. Pat Dry: Pat the pork steaks dry with paper towels to remove excess moisture.

2. Season & Marinate: Place the pork steaks in a baking dish, season with salt, pork seasoning, and olive oil. Rub evenly and let marinate for 30 minutes.

3. Bake: Arrange the pork steaks in a single layer with space between each piece and bake in a preheated oven to 430°F / 220°C (400°F convection / 200°C fan) for 20-25 minutes, or until they reach 145°F (63°C) internally.

4. Rest & Serve: Let the pork rest for 4-5 minutes before serving warm.

My Tips for Juicy Oven-Baked Pork Steak

Let the Flavors Settle: I like to marinate the pork for at least 30 minutes, even longer if I can; it gives the seasoning time to really settle in and makes the meat so much tastier.

Keep It Juicy: I always check the pork with a thermometer and pull it out right at 145°F. Any higher and it starts to dry out, so that's my little secret for perfect tenderness.

Storage and Reheating

If I have leftovers, I keep them in an airtight container in the fridge for up to 3 days. When reheating, I use a low oven or skillet with a splash of water; it keeps the pork moist and just as flavorful as when it first came out of the oven.

What to Serve with Baked Pork Steak Recipe

I love serving baked pork steak with creamy mashed potatoes, roasted potatoes, or a crisp tomato salad. A slice of crusty ciabatta or garlic bread on the side makes it even better for soaking up those savory juices.

Instructions

  • Pat the pork steaks dry with paper towels to remove any excess moisture.
  • Place the pork steaks in a baking dish and add the salt, pork seasoning, and extra virgin olive oil. Rub the seasoning mixture evenly over all sides of the pork steaks. Let them marinate for 30 minutes.
  • Arrange the pork steaks in a single layer in the baking dish, leaving a little space between each piece.
  • Preheat the oven to 430°F / 220°C (400°F convection / 200°C fan).
  • Bake for 20-25 minutes, or until tender and cooked through, reaching an internal temperature of 145°F (63°C).
  • Remove from the oven and let the pork rest for 4-5 minutes before serving. Serve warm and enjoy.

Notes

Marinate for Flavor: I like to let the pork sit with the seasoning for about 30 minutes, it really helps the spices sink in and gives a richer taste.
Give Them Space: I always leave a bit of room between each pork steak so they roast nicely instead of steaming.
Check for Juiciness: I use a meat thermometer to make sure they hit 145°F; that’s the sweet spot where the pork stays tender and juicy.
Add a Finishing Touch: Sometimes I brush a little honey or BBQ sauce on top during the last few minutes for a light glaze and extra flavor.
