Ingredients

- 200 g Powdered Sugar
- 1 teaspoon Vanilla Extract
- 1 teaspoon Cinnamon Powder
- 230 g Tea Biscuits
For Rolling:
- 40 g Tea Biscuits
- 90 g Rainbow Sprinkles
Instructions
- In a large mixing bowl, add cream cheese, salted butter, powdered sugar, vanilla extract, and cinnamon powder. Mix until smooth and well combined.
- Crush the tea biscuits into fine crumbs with a food processor.
- Add 230 g tea biscuits crumbs to the cream cheese mixture. Put the rest of the tea biscuits crumbs in a small bowl. Set aside.
- Fold in the crushed tea biscuits until evenly distributed throughout the mixture.
- Place the mixture in the freezer for 2 hours to harden.
- Remove the bowl from the freezer. Take small portions of the cheesecake mixture and roll them into balls using your hands.
- Once rolled, place the cheesecake balls on a baking sheet lined with parchment paper. Freeze for 2 hours to harden.
- Roll half of the cheesecake balls in the crushed tea biscuits and the other half in the rainbow sprinkles until they're evenly coated.
- Place the coated cheesecake balls back on the parchment-lined baking sheet.
- Once all the cheesecake balls are coated, freeze them for at least 1 hour to firm up.
- Once chilled, your cheesecake balls are ready to serve! Enjoy them as a delicious treat or dessert.
