  • Mozzarella Cheese: I like adding small pieces of mozzarella for a creamy touch that pairs beautifully with the juicy tomatoes and fresh basil. 
  • Fresh Basil: I always add basil at the end; it gives that bright aroma and makes the bruschetta taste so fresh. 
  • Bread and Garlic: Toasted bread rubbed with garlic is my favorite base; it's simple, but it ties the whole recipe together.

1. Cut the cherry tomatoes in half and put them in a large bowl.

2. Chop the mozzarella cheese into little bits and add them to the bowl with the cherry tomatoes.

3. Cut the fresh basil leaves into tiny pieces and add them to the bowl with the cherry tomatoes and mozzarella cheese.

Ingredients 

  • 200 g Cherry Tomatoes
  • 50 g Mozzarella Cheese
  • Fresh Basil
  • ¼ teaspoon Salt
  • 1 teaspoon Dried Oregano
  • 3 tablespoon Extra Virgin Olive Oil
  • 1 Cloves Garlic
  • Slices of Bread

Instructions

  • Cut the cherry tomatoes in half and place them in a large bowl.
  • Slice the mozzarella into small pieces and add them to the bowl with the tomatoes.
  • Chop the fresh basil leaves finely and stir them into the mixture.
  • Sprinkle in the salt and dried oregano, then drizzle 2 tablespoons of extra virgin olive oil over the top. Toss gently until everything is coated.
  • Cut the bread into slices and toast them until golden and crisp.
  • While the bread is still warm, rub both sides with the garlic clove so the flavor sinks in.
  • Spoon the tomato, mozzarella, and basil mixture evenly over the garlic-rubbed bread.
  • Finish by drizzling the remaining extra virgin olive oil over the bruschetta.
  • Serve immediately so the warm bread pairs with the fresh topping.

Notes

Use Ripe Tomatoes: I like to choose the ripest cherry tomatoes so they burst with sweetness in every bite.
Toast the Bread Well: I always toast it until it’s crisp enough to hold the topping without turning soggy.
Add Basil at the End: I find sprinkling the basil on last keeps its fresh aroma and bright taste.
Serve Right Away: I like to enjoy bruschetta as soon as it’s made, so the bread stays crunchy and the topping feels fresh.
