Ingredients 

  • 3 Chicken Breasts
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper
  • 1 tablespoon Italian Seasoning
  • 2 tablespoon Extra Virgin Olive Oil
  • 200 ml Chicken Stock
  • ½ Onion
  • 2 Garlic Clove

Instructions

  • Pat the chicken breasts dry with a paper towel.
  • Place the chicken breasts in a large bowl.
  • Season the chicken breasts with salt, black pepper, and Italian seasoning. Drizzle the extra virgin olive oil over the chicken breasts. Rub the seasoning into the chicken for an even coating. Let it marinate for 30 minutes.
  • Pour the chicken stock into a baking dish.
  • Add the chicken breasts and sprinkle chopped onion and garlic all over.
  • Bake in the preheated oven at 392°F /200°C with a fan for 20 minutes.
  • Let the chicken rest for 5 minutes before serving.
  • Slice the chicken breasts and spoon the flavorful stock and onion mixture over the plate when plating.

Notes

Pick Similar Sizes: Choose chicken breasts that are about the same size for even cooking. If one’s too thick, give it a quick pound to match. 
Boost the Flavor: Add a splash of white wine, a squeeze of lemon, or a sprig of thyme to the stock for extra depth. 
Don’t Overcrowd: Arrange the chicken in a single layer so the stock can surround each piece, ensuring even cooking. 
Spice It Up: Want more flavor? Add a pinch of paprika, cayenne, or a dash of Worcestershire sauce to the seasoning.
